Lentil soup (soup)



Lentil soup is mentioned in the OldThe covenant. The suggested soup recipe, of course, did not come from those times (if only because the soup contains tomatoes), but the soup prepared for this recipe is very tasty and nutritious. We need to take:



  • 400 g of lentils

  • 2 liters of chicken broth

  • 3 onions

  • 2 tomatoes

  • 4 cloves of garlic

  • 0.5 tbsp. margarine or oil

  • condiment cumin (zira)

  • pepper

  • salt


Lentils are sorted and washed. Onions are cleaned. Two bulbs cut into quarters, and the third cut into small cubes. With tomatoes, we remove the skins (this will be easier if we first heat them with boiling water) and cut each tomato into four parts. Garlic is cleaned and cut large.



Bring the broth to a boil and put it into itlentils, onions, quarters of tomatoes and garlic. Cook on low heat, without covering the lid until the lentils become soft (this is about 40-50 minutes).



Oil or margarine is melted in a frying pan andbrown it in it. Soup is wiped through a sieve (but you can do without it), season with salt, pepper and zira (cumin). Spill on plates and sprinkle with fried onions.



Lentil soup with smoked meat



Smoked meat very well combined with legumes, so in many soups of legumes, add smoked pork ribs or bacon. Try and you cook lentil soup with smoked meat. For this we take:



  • 400 g smoked pork ribs

  • 1 tbsp. lentils

  • 60 g of leek

  • 2 tablespoons vegetable oil

  • 1 tbsp. flour

  • parsley greens

  • ground black pepper

  • salt


Fill lentils 5 tbsp. water and bring to a boil. Pork ribs chop into pieces, put in a pan with lentils and cook until softened lentils (about 40-50 minutes). Solim to taste at the end of cooking.



Onions finely chop and lettuce in oil. We pour in flour, passer, dilute a small amount of hot broth, pour into the soup and cook for 1-2 minutes. Before serving, sprinkle the soup with chopped parsley and pepper. This soup is preferably served with croutons.



Lentil soup in Turkish



Lentil soup (soup) is quite popular in Turkey. Why not try to make a soup of lentils in Turkish at home? For this we need the following products:



  • 16 tbsp. water or broth

  • 4 tbsp. chopped tomatoes without seeds

  • 3 tbsp. lentils

  • 3 tbsp. peeled and chopped spinach

  • 2 tbsp. finely chopped onions

  • 1 tbsp. wheat flour bulgur

  • 1 tbsp. finely chopped parsley

  • 0.5 tbsp. vegetable oil

  • 3 tablespoons tomato paste

  • 3 tablespoons vinegar or lemon juice

  • 3 tsp. salt

  • 2 tsp. pepper

  • 0.5 tsp cayenne pepper


12 tbsp. water or broth poured into a large soup pot, set on medium heat and bring to a boil. Add lentils and salt 2 tsp. salt, reduce fire and boil for half an hour.



We put another pan on medium heat,heat the oil in it, add the onion and 1 tsp. salt. Stir until the onion becomes a homogeneous mass. Reduce the heat, cover with a lid and leave for 3 minutes. Then add bulgur and pepper (normal and cayenne) and mix until the shade of the mixture turns brown.



After that, we put tomato flesh in the pan,tomato paste, parsley and pour 4 tbsp. water or broth. Bring to a boil, reduce fire, cover with a lid and boil for 15 minutes on a small fire.



The resulting mixture is poured into a pan with lentils, bring to a boil and keep on a small fire for 40 minutes (bulgur and lentils should become soft). If the soup is too thick, add more water.



Remove the lid, pour the spinach and leave for 2 minutes. Then stir the soup and cook for 2 more minutes. Remove the soup from the fire, add vinegar or lemon juice and immediately served to the table.
