The beauty of this soup is not only in the speed of cooking - broccoli is rich in useful vitamins and minerals, which not only strengthen the immune system, but also are an effective weapon against stress.






Broccoli cream soup



To prepare this soup we will need:




  • fresh or frozen broccoli - 300 g

  • meat broth - 1 tbsp.

  • cream - 1 tbsp.

  • onions - 1 pc.

  • olive oil - 1 tbsp.

  • flour - 3 tsp.

  • garlic - 3 slices

  • greens, sour cream, salt, pepper - to taste

  • Cedar nuts and fried bacon for decoration


We heat the pan on the stove. Pour olive oil into it, pour in the flour and fry the flour in place for three minutes, stirring constantly.



Onions and garlic are cleaned, finely chopped, poured into a pan with flour and fry for two to three minutes.



Broccoli (if it was frozen - then defrosted), finely chopped, poured into a pan with flour, onions and garlic and fry for five minutes, without forgetting to stir it.



We pour soup into the pan, salt and pepper to taste and cook for 15 minutes. Then let the soup cool down a bit, pour it into a blender and mash it.



Pour the mashed potatoes back into the pan,pour in cream puree and cook for another 10 minutes. Ready soup is laid out on plates, add sour cream, adorn with finely chopped greens, pine nuts and pieces of fried bacon (optional).
