An unusual recipe: a delicious salad with pumpkin and onions in deep frying
Warm salad is a great idea for a hearty winterlunch or dinner. The juicy combination of caramelized onion and roasted pumpkin with spices will pleasantly surprise even sophisticated gourmets. This salad is perfect as a side dish for meat, fish or poultry.
Ingredients
Pumpkin - 0,5 kg
Vegetable oil - 1 liter
Yoghurt three or five percent without additives - 100 g
Onions - 1 pc.
Spices, mint, dill - to taste
Cooking method
Cut the onion into thin slices in a few millimeters. It is better to use sweet onions, you can also add leeks, fennel or shallots
In a saucepan or a pot with a thick bottom, pour refined oil layer of not less than five centimeters
Pumpkin of any sort is cleaned of seeds, peel and fibers, cut into small cubes. Pumpkin, if desired, can be replaced with squash, potatoes or eggplant
Mix the black ground pepper, salt, red hot chili and roll the pumpkin cubes in these spices. A mixture of seasonings can be selected to taste
Pour the pan with oil over medium heat and fry the onions until a dark crispy crust
Put the onion on a paper towel and dry off the excess fat
Then in a pan fry the pumpkin cubes in small batches until light crust. Finished cubes are also dried on a paper napkin
Finely chop greens
Put onions and pumpkin cubes, pour on sauce from yogurt and greens, serve with warm rye croutons
