Salad with pumpkin and cucumber



This is one of the simplest recipes. This salad can be cooked in a hurry if the guests suddenly came early. For its preparation we will need:




  • third of a small pumpkin

  • 4 cucumber

  • 2 eggs

  • half-cans of mayonnaise

  • green onion, ground pepper, salt - to taste


Pumpkin and fresh cucumber and cut into strips. Eggs boil hard boiled, cleaned, finely chopped and mixed with pumpkin and cucumbers. Solim and pepper to taste. Finally, season the salad with mayonnaise and sprinkle it with finely chopped green onions.



Salad of pumpkin and potatoes



This recipe is already more sophisticated, but this salad is not so complicated in cooking. To please them guests, we need to take:



  • 1 kg of potatoes

  • 400 g canned pumpkin

  • 400 g canned shrimp

  • 400 g sour cream

  • 6 bulbs

  • 2 sour apples

  • 1 tbsp. hot chicken broth

  • 2 handful of watercress

  • 3 tablespoons finely chopped dill

  • juice of one lemon

  • salt to taste


We thoroughly wash the potatoes in coldrunning water with a brush, put in a pan, fill it up with water and cook in a uniform for 25-30 minutes. While the potatoes are brewed, we take a canned pumpkin from the jar and lightly dry it. Canned shrimp is covered with cold water and let it drain. Apples are cleaned and cut into quarters, remove the seeds and cut into cubes. We clean shallots and finely chop.



When the potatoes are ready, we drain the water, we giveit is slightly cool and cut into circles. We mix potatoes, pumpkin, shrimp, apples and onions. We fill the salad with sour cream sauce. To prepare the sauce mix sour cream, chicken broth, lemon juice and dill. Finely cut the watercress and add to the rest of the ingredients.



Cover the salad with a lid and leave for half an hour at room temperature, so that it soaked in the dressing.



Pumpkin salad with feta cheese



This salad is very spicy and flavorful. If the previous salads were prepared from raw or canned pumpkin, it would be necessary to bake it to prepare this dish. To prepare this salad, we will need:



  • 800 grams of diced pumpkin pulp

  • 150 g of marinated feta cheese

  • 100 g spinach

  • 20 g of olives

  • 3 tablespoons olive oil

  • 0.5 tsp ground zira

  • 0.5 tsp cayenne pepper

  • pepper, salt - to taste


For sauce:

  • 60 ml of olive oil

  • 1 tbsp. red wine vinegar

  • 1 shallot


Preheat the oven to 200 ° C. Cubes of pumpkin roll in oil and a mixture of spices and bake in the oven for half an hour (they must be seasoned). While the pumpkin is baked, we prepare the dressing, mixing olive oil, red wine vinegar and finely chopped shallots.



Leaves of spinach lay on the dish. We evenly lay out the pieces of pumpkin, sprinkle them with crumbled feta cheese and olives, sprinkle the salad with dressing.



Sweet Pumpkin Salad



Salad from a pumpkin can be not only an appetizer, but also a dessert. To prepare a sweet pumpkin salad, we will take such ingredients:



  • 250 g of pumpkin

  • 250 g of sink

  • 100 g raisins

  • 100 g 20% ​​sour cream

  • 150 ml of tea

  • sugar to taste

  • Melissa greens for decoration


Pumpkin is peeled, we remove seeds, cut the flesh into slices and rub it on a large grater. We remove the stones from the plums, finely chop the flesh. Raisins should be soaked for an hour in chilled tea.



After an hour, we pour out the tea, mix all the products and season with sweetened sour cream. Before serving, decorate the salad with lemon balm.
