Sour cherry compote
Cherry compote is more popular than cherry,because cherry grows in the garden in many, and cherries have to be bought on the market: then God willing simply eat it, not that the compote to close. But if you do not mind throwing a kilo or two of berries on homemade preparations, why not do it sweet cherry compote?



For compote from sweet cherries only mature berries are suitable, without diseases, pests and mechanical damages. Desirable do not mix different kinds of cherries in compote: each variety has its own flavor and aroma.



Sour cherry compote with vanillin



Vanillin will give the drink a delicate aroma - your cherry compote will smell like creamy cherry caramels. To prepare a cherry compote with vanillin, we take:



  • 4-5 tbsp. cherries with bones of any sort

  • 1.5 tbsp. granulated sugar

  • Vanillin - to taste


Sweet cherries, remove stems. We wash the berries and throw them into the colander. Pour into a saucepan about 3 liters of water, bring to a boil. We sterilize the jar, fill it with cherries and put it into a large bowl. Pour in a jar of boiling water to the very top and leave for 10-15 minutes, closing the lid.



Then drain the water into a clean pan (berrieswe leave in the bank). We pour out the sugar into the pan, bring it to a boil and boil until the sugar dissolves. Add vanillin, you can also add citric acid. The resulting syrup pour the berries to the very top of the jar.



If it is too little, add boiling water. We roll the jar with a metal lid, turn it upside down and wrap it with a warm blanket. When the bank is completely cooled, we remove it for storage.



This compote of cherry can seem to you too concentrated, so before serving, you can dilute it with drinking or mineral water to taste.



Compote of yellow cherry



In cherry compote, cooked in this way, the berries retain the taste of fresh ones. It is best to prepare such a compote of yellow varieties of sweet cherry. For its preparation we will need:



  • cherries

  • water - 1 l

  • sugar - 2 tbsp.


Of course, the exact amount of syrup will depend on the number of berries, it is important to simply observe the proportions and take 2 cups of sugar for each liter of water.



I clean my berries and dry them. Prepared dry cans are filled with berries for a third. Water with sugar heat, stirring, until the sugar is completely dissolved. With hot syrup pour the jars through the top, immediately cork, turn upside down and cover with a warm towel. When the banks cool down, you can turn them upside down with their necks and remove them for storage.



Compote of sweet cherry and black currant



If you think that the cherry compote has too rich taste, you can prepare a compote-assortment, adding to cherries other berries, for example, black currant. To make a cherry-blackcurrant compote, we will need:



  • 1 kg of sweet cherry

  • 100 g black currant


For syrup

  • 1 liter of water

  • 300 g of sugar


Berries are sorted and cleared from the peduncles,carefully wash it and throw it into a colander. Put the berries in the cans on the shoulders. Water with sugar bring to a boil, as soon as the syrup boils, we fill them with berries. Sterilize 15-20 minutes (for half-liter cans), 20-25 minutes (for liter), 45 minutes (for three-liter). We roll the banks.



Sour cherry compote with juice



Another option for making assorted assortment. Instead of sugar syrup, cherry berries are filled with juice of any berries with the addition of sugar or citric acid. If the juice is made from sweet berries, you can not add sugar, if acidic - citric acid. We sterilize the same way as in the previous recipe.
