Bean salad for the winter



We suggest you to prepare such a tasty and nutritious salad from beans for the winter. For its preparation you will need:



  • 3 kg of tomatoes

  • 1 kg of kidney beans

  • 0,5 kg of onions

  • 0.5 kg of carrots

  • 1 tbsp. vegetable oil

  • 150 ml 9% vinegar

  • 5 cloves of garlic

  • salt

Before harvesting the salad, you should take care of the beans. It is well washed under running water. The washed beans are poured in cold water and soaked for 5 hours. Then it is cooked until ready and thrown back to the colander.



With washed tomatoes you need to peel. To peel easily removed, they are given with boiling water. Peeled tomatoes are cut into slices. Peeled carrots are rubbed on a large grater. Onion finely chopped, and garlic is passed through the scabbard.



In a pan, shift all vegetables, except beans,and garlic. Fill all with vegetable oil, salt, mix well and extinguish on low heat. When the vegetables are almost cooked, they add beans. The salad is well stirred and stewed for another 20 minutes. Then pour in the vinegar, mix again and remove from heat. The prepared salad is spread over sterilized jars and rolled under the lids.



Bean salad with bell pepper



We offer you another version of the bean salad for the winter. For its preparation, take:



  • 1 kg of kidney beans

  • 1 kg of onion

  • 1 kg of Bulgarian sweet pepper

  • 1-2 peppers pepper

  • 1 kg of carrots

  • 2.5 kg of tomatoes

  • 1 tbsp. vegetable oil

  • 1 tbsp. peeled garlic cloves

  • salt, sugar, vinegar to taste

As in the previous recipe of the bean stock, beans should be soaked. Cook the beans until half cooked, and drain excess water.



Tomatoes can be scrolled through a meat grinder orcut in small pieces. Carrots are rubbed on a large grater. Onions and sweet peppers are cut into cubes. Garlic and hot pepper are twisted through a meat grinder. If you do not really like sharp dishes or garlic, you can reduce the amount of these two ingredients in the salad.



Beans are mixed with tomatoes and cooked for30 minutes. Onions, carrots and sweet peppers are separately stewed in a large frying pan or in a saucepan. Then all the vegetables are combined, garlic and hot pepper are added. Salad again bring to a boil, add a little vinegar, sugar and salt. Your bean salad is ready for the winter. Hot salad is laid out on cans and rolled under covers.



Beans in tomato for the winter



In the US, they very much like canned beans in tomato sauce. Prepare a bean for your family. To do this you will need:



  • 1 kg of kidney beans

  • 2-3 onions

  • 1 kg of tomatoes

  • 3 tsp. salt

  • 1 tsp. black ground pepper

  • 0.5 tsp. sweet pepper

  • 5 laurel leaves

  • 1 tsp. 70% vinegar

For this billet from beans you can take freshbeans. Dry beans are also perfect, but it should be soaked before bedtime. Cook the beans until done. Finely chopped onions are fried in vegetable oil until it becomes soft.



With tomatoes remove the peel, after having shaved themwith boiling water. Peeled tomatoes are boiled with salt until soft, after which they knead the crush. In the finished tomato sauce add beans, onions, spices. Bay leaves should be very finely chopped and also added to the beans. The mixture is brought to the boil, vinegar is added. Hot beans in tomato sauce are spread over sterilized jars and rolled under covers.
