Marinated salads for the winterOne of the most popular ways of harvesting vegetables for the winter is pickling. Vinegar not only preserves vegetables for a long time, but also gives them a piquant taste. Why not close for the winter pickled vegetable salad? The country of the Soviets will share several recipes!






Pickled salad in Italian



To prepare an Italian pickled lettuce we will need:



  • 1.25 kg of red and yellow sweet pepper

  • 1.25 kg of aubergines

  • 1.5 L of white wine vinegar

  • 600 ml of olive oil

  • 300 g of salt

  • 6 cloves of garlic

  • 2 large pods of red chili peppers

  • 2 tablespoons dried oregano


Pepper mine, remove the seeds and stalk and cut along into thin strips. Fresh aubergines washing, peel and cut into circles, and then - the same strips as pepper.



Take the plastic container, put the layer on the bottomchopped pepper, sprinkle with salt. Continue to spread the pepper layers, pouring them with salt. Then we put the load on top. Similarly, lay layers of eggplant in another container. We set aside for an hour and a half, so that the vegetables are allowed to juice.



After an hour and a half merge the excreted liquid, squeeze the remainder of the liquid from the vegetables with your hands and put eggplants and pepper back into the containers. Fill the vegetables with vinegar and leave for another hour and a half.



After an hour and a half merge the vinegar, squeeze the vegetables with your hands and transfer to a bowl with finely chopped garlic, chili, dried oregano and olive oil. Thoroughly mix.



Sterilize the jar, shift the salad into it and tightly seal it.



Marinated tomato salad



To prepare a pickled salad with tomatoes, we will need such ingredients:



  • tomatoes per one liter jar

  • 1 tbsp. sunflower oil

  • 1 onion

  • 1 liter of water

  • 75 g of sugar

  • 30 g of salt

  • 15 ml 9% vinegar

  • 10-15 peas of black pepper

  • 3-5 buds of a carnation

  • 2-3 bay leaves


We sterilize the Lithuanian can. Fill in the jar with sunflower oil. My tomatoes, cut into rings and put in a jar (it needs to be filled to the top). We clean onions, cut into rings and put tomatoes on top.



Then we prepare marinade. In a saucepan with a liter of water pour vinegar, put salt, sugar and spices (black pepper peas, bay leaf, cloves). Bring the brine to a boil.



Pour boiling brine in a jar with slicedtomatoes and onions, making sure that the spices are distributed evenly. Sterilize the jar for 15-20 minutes, roll up and set it upside down for cooling.



Marinated cucumber salad



To prepare a pickled cucumber salad for the winter, we will need to take the following products:



  • 5 kg of fresh cucumber

  • 1 kg of onions

  • 300 ml 9% vinegar

  • 200 ml of vegetable oil

  • 60 g of salt

  • 25 g of sugar

  • greens of dill and parsley - to taste


Cucumbers, if they have a thick skin - and clean and cut into circles. We clean onions and cut into half rings. Green parsley and dill carefully mine and finely chopped.



Take the enameled container (basin, pan), lay out in it cucumbers, onions and greens. Fill vegetables with vegetable oil, add vinegar, sugar and salt and leave for a day for pickling.



Sterilize the half-liter jars, lay out the salad in them and cover the jars with covers. Sterilize the cans with salad in hot water for 15-20 minutes. We close the cans with sterilized lids.
