Marinated pepper with spices

  • 1 liter of water

  • 600 ml table vinegar

  • 100 g of sugar

  • 90 g of salt

  • 2-3 bay leaves

  • 1 g black pepper

  • 1 g of fragrant pepper


We take the sweet pepper, carefully washing it and blanching it for 3-4 minutes in boiling water. We extract the pepper from boiling water, cool it, remove the pedicels and seeds and cut into strips about 1 cm wide.



From water, vinegar, salt, sugar and spices, we preparemarinade. We bring it to a boil and pour into jars (they should be filled with a marinade for a quarter). In cans with marinade, we put strips of pepper and pasteurize at a temperature of 90 ° C (15 minutes for half-liter cans, 20-30 minutes for liter and two-liter).



Spicy pickled pepper



For fans of spicy peppers, we can recommend the following recipe. In order to prepare a hot pickled pepper, we will take such products:



  • 70 ml of vegetable oil

  • 10-12 cloves of garlic

  • 3 oranges

  • 0.5 tbsp. shredded ginger

  • 3 tablespoons Sahara

  • 2 tsp. freshly ground black pepper

  • 2 buds of a carnation


We wash the pepper, cleanse the seeds and cutthin strips. Peel the garlic, grind and fry in oil over low heat together with chopped ginger for 5 minutes. Add the pepper and mix thoroughly.



We remove the peel from oranges with a grater,squeeze the juice and add it to the pepper with ginger and garlic. Pour sugar, add cloves and black pepper. Stir thoroughly and cook over low heat for 20-25 minutes, covered with a lid. Pepper should become soft.



Open the lid and continue cooking on a very slow fire, until all the liquid is evaporated. We transfer it to the jar, sterilize it and roll it up.



Marinated pepper with apples



An interesting and unusual taste for pickled sweet peppers and apples. To pickle the Bulgarian pepper with apples, except pepper and apples we will need:



  • 1 liter of water

  • 300 ml 6% vinegar

  • 2 tablespoons Sahara

  • 1 tbsp. salt

  • 1 tsp ground cinnamon


For marinating it is best to take red and yellow pepper and unpainted varieties of apples. We rinse pepper, clean, cut into halves and blanch in boiling water for 2-3 minutes. Let's cool the pepper.



My apples, cut into 4 slices and remove the seeds. Blanch the apples in boiling water for 1-2 minutes and cool.



Take the jar, lay it in layers of apples and peppers. We prepare marinade from water, vinegar, salt, sugar and cinnamon, bring to a boil. We pour pepper and apples with marinade, we sterilize jars and roll them up.



Marinated pepper with honey



Usually, sugar is added to the marinade, but why not try to replace it with honey? Honey will probably give the pickled pepper an interesting flavor! To close the marinated pepper with honey, we will need:



  • 250 ml of vegetable oil

  • 100 ml of 9% vinegar

  • 50 g of honey

  • 1 tbsp. salt


Rinse the sweet pepper, remove the seeds andstalk, cut into rings. We prepare marinade from vinegar, vegetable oil, honey and salt. Bring the marinade to a boil, boil for 8-10 minutes and cook until the pepper turns white. We put pepper in steamed jars, pour marinade and immediately roll.
