Pickled marrowsMarinating is one of the simplest and affordable ways of harvesting vegetables for the winter. The country of the Soviets has already told us how to pickle tomatoes and beets, and today we will learn how to close pickled squash.






Marinated zucchini with spices



To prepare for the winter pickled squash with spices and herbs, we should take the following ingredients:



  • 4 kg of young zucchini

  • 20 peas of black pepper

  • 20 peas of sweet pepper

  • 10 bay leaves

  • 10 cloves of garlic

  • 5-6 pods of red pepper

  • 5 sprigs of parsley

  • 5 sprigs of celery

  • half a bunch of dill

  • half horseradish root


For marinade:

  • 1.5 liters of water

  • 350 ml of 6% vinegar

  • 100 g of salt

  • 100 g of sugar


For pickling, take the young zucchini long20-25 cm, not more. Washing zucchini, rinse with cold water. Cut the stems and cut into circles about 2 cm thick. Cut the red pepper along, remove the garlic cloves, remove the horseradish root from the skin, chop the greens.



Take the sterilized cans, put it on the bottomgreens and spices, fill the jars with circles of courgettes. From the water, salt, sugar and vinegar we prepare marinade, pour hot marinade zucchini. We cover the jars with lids, sterilize and roll them.



Marinated zucchini with mint



Marinated zucchini with mint before pickling fry in vegetable oil. For their preparation we will take such products:



  • 8 small zucchini

  • 150 ml of grape vinegar

  • 150 ml of olive oil

  • 1 clove of garlic

  • 1 pod of hot pepper

  • several sprigs of mint

  • salt, pepper to taste


Marrows my and cut into circles. Heat on a frying pan 2 tbsp. olive oil and fry in it zucchini from two sides to a golden hue. Spread zucchini on a paper towel, which will absorb excess fat.




Garlic is clean and thinly sliced. From the pepper we take out the seeds and cut it into thin circles. We put fried zucchini in a shallow bowl, sprinkle with chopped peppers and chopped garlic, fill with the remaining olive oil. Mint mine, cut it with scissors and add it to zucchini. Solim, pepper to taste.



Vinegar is brought to a boil in a small saucepan,pour it into zucchini. Cool zucchini, cover with a lid and put in the refrigerator for several hours (or better - days). You can instead expand zucchini in jars, sterilize and roll.



Marinated zucchini



For the preparation of sharp marinated squash with black pepper, we will need to take:



  • fresh young zucchini

  • 1 liter of water

  • 600 ml 9% vinegar

  • 12-15 g of black currant leaves

  • 5-8 buds of a carnation

  • 5-8 peas of black pepper

  • 1-2 bay leaves


For marinating you need to take young zucchini,whose seeds are still immature, and the flesh is dense. We clean zucchini from the skin, remove the fibrous soft core together with the seeds. We cut the flesh of the squash cubes with cubes of 2-3 cm.



Blanch the cut courgettes in boiling water for 4-8 minutes (the duration of blanching depends on the size of the cubes) and immediately cool in cold water.



We prepare marinade. To do this, bring the water to a boil, dissolve salt and sugar in it, add spices, then vinegar and immediately remove from the fire.



Zucchini piled in cans and poured hot marinade. Pasteurize the cans: half-liter for 15 minutes, liter and two-liter for 20 minutes. We roll the banks.



Marinated zucchini with onions



To prepare marinated zucchini with onions, we will need the following products:



  • 1 kg of squash

  • 500 ml of water

  • 500 ml of white wine vinegar

  • 150 g of very small onion

  • 150 g of sugar

  • 4 cloves of garlic

  • 1 tbsp. salt

  • 1 tsp black peppercorns

  • 1 tsp coriander seeds

  • 1 tsp fennel seeds

  • 1 sprig of thyme

  • 1 sprig of rosemary


Zucchini cut into slices half a centimeter thick. Garlic and onions are cleaned and cut into halves. Spread zucchini, onions and garlic in a jar with layers.



To mix marinade, mix half a literwater with white wine vinegar, sugar, salt, spices and herbs, bring to a boil and pour zucchini. Tightly close the jar with a lid, turn it upside down for cooling.



Without sterilization, marinated zucchini can be stored for 2-3 weeks.
