To prepare 10 portions of this New Year's dish you will need the following ingredients:



  • boiled and smoked ham - 1 pc. (2-2.5 kg)

  • whiskey - 0,7 st.

  • brown sugar - 0.5 tbsp.

  • apple cider vinegar - 3 tablespoons

  • salt - 1 tsp.

  • ground cinnamon - 0,5 tsp

  • peel and juice of one orange

  • red pepper - 1 pinch

  • clove to taste

  • oil for lubrication of molds



First, prepare the icing. Take a saucepan and pour in it freshly squeezed juice of one orange and apple cider vinegar. Bring the mixture of juice and vinegar to a boil. In a boiling mixture put brown sugar, salt, ground cinnamon, grated orange peel and red pepper. Cook the icing for 2 minutes, then pour in the whiskey and cook for another 1-2 minutes. Remove the glaze from the heat and allow it to cool slightly.



In the meantime, take the ham and cut it offthe upper crust. On the ham should remain a layer of subcutaneous fat (the thickness of the layer is about 1 cm). Over the entire surface of the ham, cut the mesh with a sharp knife. At each point where the grid lines intersect, insert the carnation bud.



Lubricate the baking dish and place it in theher ham. Take a culinary brush and evenly grease the ham with a prepared glaze on all sides. Put the ham in the oven, preheated to 170 ° C. Bake the ham for one and a half hours. Periodically you need to water it with juice, which will stand out when frying.



Put the prepared ham on the dish, cover and leave in a warm place before serving.
