Tongue in sour cream sauceIf you are tired of a traditional chicken or duck on the New Year's table, you can serve as a meat dish to the New Year's table tongue stewed in sour cream sauce.






Tongue in sour cream sauce



To prepare this dish you will need:

  • beef tongue - 850 g

  • carrots - 1 pc.

  • onions - 1 pc.

  • parsley root - 1 pc.

  • salt, greens, spices - to taste


Ingredients for sour cream sauce:

</ strong>

  • broth - 2 tbsp.

  • sour cream - 2 tbsp.

  • butter - 4 tbsp. l.

  • flour - 2 tbsp. l.

  • salt, ground pepper - to taste


Pour the tongue with hot water. Put in the water the cleaned root of parsley, carrots, onions and spices (red pepper, bay leaf, bell pepper, etc.). Salt to taste and cook the tongue until ready.



While the tongue is brewing, prepare sour cream sauce. To do this, melt the butter in a saucepan and fry the flour in it until golden. Remove the sauté pan from the fire, pour in broth into it broth, mix and cook. Salt and pepper the boiled broth, add sour cream into it and cook again.



Finish the tongue in cold water and clean it.from the skin. Cut the boiled tongue in small cubes, put in hot sour cream sauce, add the red pepper, bring to a boil at minimum heat and warm up for 15 minutes.



Served this dish with a side dish of friable boiled rice or chips, sprinkled with finely chopped greens.
