Mikado Cake



Cake "Mikado" of eggs usually consists of 10-12layers of dough, smeared with exquisite chocolate cream and condensed milk (photo cake in the section). Today there are several options for making dessert. They differ from each other not so much by the test, as by the composition of the cream and by the decoration of the finished product.








Cake "Mikado": a real Armenian recipe



It is this method that is considered traditional and the most original to taste.





Necessary ingredients:



Dough




  • wheat flour - 600 gr


  • butter - 125 gr


  • sour cream - 100 gr


  • granulated sugar - 100 gr


  • egg - 1 piece


  • soda - 1/2 tsp


  • vinegar for quenching


  • salt



Cream




  • black chocolate - 1 tile


  • Butter - 200 g


  • evaporated milk - 1 jar




Step-by-step instruction




  1. For the dough softened butter thoroughly rub with sugar and salt, and then there to drive the egg. Add sour cream and soda, extinguished with vinegar, once again thoroughly mix.


  2. Sift the flour through a sieve and pour it into the dough. Quickly knead to homogeneity, cover with a food film and put in the refrigerator for 40 minutes.


  3. For cream in a deep bowl, soften the butter and combine it with boiled condensed milk.


  4. Chocolate melt in a water bath, pour to the cream and beat with a mixer.


  5. Cool the dough into 10-12 equal parts and roll each of them with a rolling pin into a thin wide cake.


  6. Bake in an oven preheated to 200 ° C for 2.5 minutes until tender golden color.


  7. Carefully remove, put on a prepared tray and cover it with plenty of cream. So do with all the cakes.


  8. According to the present Armenian recipe, the "Mikado" cake should be sprinkled with grated chocolate on top and sides and sent to the refrigerator for at least 2 hours. Then you can serve on the table.

Dough in this version is more steep than in the Armenian recipe. This makes it possible to divide it not into 10-12, but into 17-19 parts. The biscuits are tender and quickly saturated with cream.

  • sugar - 120 g


  • sour cream - 100 ml


  • Butter - 100 gr



Cream




  • condensed milk - 1 jar


  • sour cream 15% - 600 ml


  • black chocolate - 1 tile




Step-by-step instruction




  1. Rinse the softened butter with a spoon with sugar, add the soda and sour cream, stir in eggs and mix.


  2. Sift flour and put into the dough. Carefully vymeshat mass, wrap in food film and put on half an hour in the cold.


  3. For cream, whip the condensed milk with sour cream.


  4. The dough is divided into 18 portions and each is rolled as thinly as possible.


  5. Bake the cakes in the oven until they are rosy at 200 ° C.


  6. Cool and cut to the correct size, carefully cover with cream and leave to soak for 4 hours.


  7. Immediately before serving, sprinkle the top of the cake with grated chocolate.







Cake "Mikado" with milk chocolate: Armenian recipe with photo



An original and delicious treat is not preparedOnly in the form of a high puff cake, but also in the form of small cakes-diamonds. To soften the taste for the decor take not bitter black, and delicate milk chocolate.

Step-by-step instruction




  1. Wipe soft oil with salt and brown sugar, add the egg and whip the mixture with a whisk.


  2. In sour cream, dissolve the soda and add to the oil-sugar mass. Gently stir everything until smooth cream consistency.


  3. Pour the sifted flour through the sieve and quickly knead the soft dough. Pack in a food film and put away for 1 hour in the refrigerator.


  4. For the cream of our future cake "Mikado" according to the Armenian recipe, combine the condensed milk, butter and cocoa and beat until airborne.


  5. Divide the dough into 8 equal parts and take one out of the refrigerator.


  6. Preheat the oven to 200 ° C.


  7. Roll the roll out on the table as thinly as possible. To dough is not sticky, sprinkle the surface and the rolling pin with flour.


  8. Bake until the edge begins to gild.

Step-by-step instruction




  1. Eggs and sugar beat to white foam.


  2. In a separate vessel, combine sour cream, melted butter, vanillin and soda. Stir and add to the egg-sugar mass.


  3. Add the entire volume of flour and knead the stiff dough so that it does not stick to your hands. Divide into 12 identical pieces, roll them into balls, cover with polyethylene and put for 60 minutes in the refrigerator.


  4. Work surface to dust with flour and gently roll out the dough on thin cakes.


  5. Bake in the oven at 180 ° C for 6-7 minutes and pour into a pile.


  6. For cream, whip the sugar, sour cream, zest and lemon juice in the mixer.


  7. Abundantly miss the sweet filling of each cake and side of the cake.


  8. Tile white chocolate melt on a water bathtogether with a small piece of butter. The mixture should be sufficiently dense. Fill it with the top of the Mikado cake and put in the refrigerator to freeze for 3-4 hours.


  9. Before serving with liquid black chocolate, apply a white pattern on the white surface.
