So, in order to bake a classic cake, we will need the following ingredients:



  • eggs - 4 pieces

  • egg whites - 4 pcs.

  • wheat flour - 3 tbsp. l.

  • almond flour - 200 g

  • salt - a pinch

  • sugar - 1 glass (and 1 glass for cream)

  • Butter - 250 g

  • jam apricot - 4 tbsp. l.

  • sugar vanilla - 1 sachet

  • milk - 1 glass

  • condensed milk - ¼ jar

  • black chocolate - 50 g

  • white chocolate - 200 g

  • cream (fat content - 33%) - 4 tbsp. l.

How to cook a cake of esterhazy?


Step 1


Whipped egg whites with a pinch of cooled eggssalt in a strong foam, whilst continuing, add gradually 1 cup of sugar. As a result, a homogeneous white mass should be obtained, which does not pour out when the bowl is turned over.


Step 2


To the whipped proteins, add the necessary amount of wheat flour and almond flour, mix until a homogeneous mass is obtained.

On parchment paper, draw a circle with a diameter of 24 cm using a simple pencil (using shapes for baking a similar diameter as a template). Such blanks need six pieces.

Let's start preparing the cream: mix half a glass of milk with a glass of sugar, 4 yolks and a sachet of vanilla sugar until smooth (optimally beat up with a mixer). The remaining half a cup of milk is brought to a boil, add the yolk mass and with constant stirring, whisk again bring to a boil. Remove the mass from the heat and cool first at room temperature, and then in the refrigerator for a total of an hour. With a mixer, beat the softened butter with boiled condensed milk; The resulting mass is mixed with the cooled custard.


Step 6


Assembling the esterhazy cake: Each cake, except the last one, is smeared with the prepared cream. The remaining upper cake is smeared with apricot jam, and then covered with white chocolate, pre-melted with 2 tbsp. l. cream. Slightly cool.


Step 7


Cake Decoration: black chocolate melt with 2 tbsp. l. cream, we transfer the obtained mass to a confectionery syringe or a prepared bag and draw a spiral on the white surface of the cake from the center to the edge.
