Recipe for Genoa cake on February 14 - Valentine's Day
Genoese cake is a fabulous dessert from Italy. Sponge cake, whipped cream and fresh fruit - the cake is light and delicious. Ideal for Valentine's Day: for a romantic dinner, and for a party with friends.
Genoese cake for Valentine's Day
Ingredients for biscuit
For cream and toppings you need:
3 eggs
80 grams of flour
100 grams of sugar
2 tablespoons melted butter
1 teaspoon of honey
2 cups strawberries (or other soft fruit with sourish)
2 cups whipped cream
80 grams of sugar
1.5 cups of water
¼ cup sugar
The cake is baked in a deep form with the walls 14 centimeters. Then it is cut into three cakes and decorated.
Method of making a cake for Valentine's Day







Make syrup for impregnation of future cakes. In a small saucepan, mix a quarter cup of sugar and water. Stir to boil stirring, until the sugar is completely dissolved. Remove from heat. Cool to room temperature. Add another 1/3 cup of water.
Turn the oven to 180 degrees. Cover the baking sheet with parchment or baking paper. In a large wide pan, pour water and boil.
In a large refractory bowl (smaller diameter,than a pan with water) to drive a whisk of eggs and sugar. After the steam appeared over the pan with water, it is necessary to continue to beat the eggs with sugar gently over the saucepan until the mixture turns white and increases to three times the volume. When the mixture becomes hot to the touch, remove from steam and add a teaspoon of honey. Continue to beat until the state of solid peaks (that is, the dough will not drip, but will stretch beyond the whisk for three seconds or more). It is necessary to whip very long and carefully without interruption for 5-8 minutes.
Gently pour into the beaten mixture flour,stir with a rubber spatula or spoon. Add the melted butter. Pour the dough into a form covered with parchment or baking paper at 180-200 degrees for 30 minutes.
Ready biscuit to get out of the form, leaving on it parchment or paper for baking. Let the biscuit cool down.
Put an empty deep bowl in the freezer for 10 minutes. Get it, mix it with whipped cream with sugar until you get a creamy mass.
After the biscuit has cooled, remove the parchment(paper) cut off the brown top and the walls (if desired). Cut into three cakes. Each cake is on the one hand to soak in sugar syrup (prepared in the beginning). Lower the cake spread with cream, put a series of sliced strawberries or other fruits. Put the middle cake on top, press lightly. Smear the cake with cream, lay out the fruit and again a layer of cream. Cover the top with the third crust, press lightly.
On top and on the sides, cover the cake with cream, decorate with the remains of fruits, white chocolate, write a congratulation on February 14 melted black chocolate with a confectionery syringe.
