Baked eggs (eggs-cocotte)
You are used to eating eggs for breakfast, but the usual scrambled eggs, omelets and soft-boiled eggs have long become boring? Try to cook eggs baked in the oven (the French call them baked eggs "egg-cocotte").



Baked eggs can be cooked in two ways. The first one is quite simple, eggs are simply baked with butter in a flat bottom dish. When baking in eggs, you can add breadcrumbs, cheese, herbs and spices. Such eggs can be served on toast.



But the more famous variation of this dish is baked eggs in pots (julienne from eggs). In the portion pots for baking, certain products are added (it can be vegetables, meat, fish, etc.), the egg is broken from above, and then the eggs are baked in a water bath.



Make The water bath for baking eggs-cocotte is quite simple. You need to take a large bowl for baking, fill it with warm water to about half and put directly into the water pots with eggs. The water level should be below the edges of the pots.



Baked eggs with mushrooms



If you believe Mikhail Bulgakov, eggs-cocotte with mashed potatoes were served in the restaurant MASSOLIT in the "House of Griboedov." To prepare two portions of this dish, we need to take:



  • 200 g champignons

  • 50 ml cream

  • 30 g of butter

  • 20 grams of hard cheese

  • 2 eggs

  • 1 onion

  • 1 tbsp. l. breadcrumbs

  • pepper, salt - to taste


Onions and mushrooms are finely chopped and fried in creamyoil until ready. Slightly cooling the fried mushrooms with onions, we rub them with a blender or rub through a sieve. Add cream, salt and pepper to taste, mix.



Preheat the oven to 200 degrees. Portion molds lubricate with oil, we lay out mashed potatoes in them. From above, break the egg, trying to make the yolk in the middle. Cheese three on a small grater, mix with breadcrumbs and sprinkle this mixture of eggs.



Bake for 12-15 minutes (depending on the oven) in a water bath. In ready-made eggs-cocotte, the protein must grasp, and the yolk - remain liquid (as in fried eggs-fried eggs).



Baked Eggs "Spicy"



If you like spicy dishes with vegetables, you can cook piquant coccot eggs with paprika, garlic and red pepper. For two portions of eggs, the following products will be needed:



  • tomato juice - 150 ml

  • eggs - 2 pcs.

  • sweet pepper - 1 pc.

  • shallots - 1 pc.

  • garlic - 1 small denticle

  • vegetable oil for lubricating molds

  • sugar, salt, hot red and ground black pepper - to taste


Onion cut into small cubes and fry inoil on a small fire until it becomes transparent. Sweet and hot peppers are also cut into small cubes and let in together with the onion until half cooked. We add tomato juice to the vegetables (can be replaced with mashed tomatoes), sugar and salt, crushed garlic. 5-7 minutes boil on low heat.



Portion molds are lubricated with vegetablebutter, lay out stewed vegetables in them. Gently break from above the egg, salt and pepper to taste. Bake in a water bath for 12-15 minutes, covered with a lid. We serve hot.



Baked eggs with smoked salmon



The original variation of this dish is the Scotch-style Scotch-style coccott with smoked salmon. To prepare two portions of this dish, we take:



  • smoked salmon - 60 g

  • sour cream - 4 tsp.

  • eggs - 2 pcs.

  • dill - 2 sprigs

  • butter for lubricating molds


Oven heat up to 180 degrees and lubricatemolds with butter. Smoked salmon cut into small pieces, dill finely chopped. At the bottom of the molds, put 2 tsp. sour cream, evenly distribute on it salmon and dill, from above we drive in the egg. Bake for 12-15 minutes in a water bath. Serve such baked eggs best with toast.
