Curry sauceCurry is a fairly popular blend of spices,who came to us from India. The basis of curry is turmeric, to which add other spices. Based on the curry powder, a sauce is prepared, which can be added to a variety of dishes. How to cook curry sauce, tells the Land of Soviets.



In general, the word "curry" is called not only the seasoning, but also dishes that include curry sauce. Curry is usually a thick liquida dish of stewed vegetables and legumes, with or without meat, flavored with curry. Usually curry is served with rice. And in European cuisine under curry can mean any dish that includes curry sauce or even a simple seasoning in powder.



Curry sauce: option 1



Cooking curry sauce can be a variety of differentmethods, only one component remains unchanged - curry powder. Let's start by making a sauce based on meat broth with onions and apples. For this we will need:



  • meat broth - 1 tbsp.

  • vegetable oil - 3-4 st. l.

  • cream - 2 tbsp. l.

  • curry powder - 2 tbsp. l.

  • flour - 1 tbsp. l.

  • onions - 1 pc.

  • apple - 1 pc.

  • garlic - 1-2 cloves

  • lemon juice - 1 tsp.

  • Ready mustard - 1 tsp.


Onions and garlic is cleaned, finely chopped and fried invegetable oil in a deep frying pan. When the onion gets golden color, slowly pour the flour into the pan and fry two more minutes, not forgetting to constantly mix with a wooden spatula.



We remove the frying pan from the plate, pour in the broth andcarefully mix, making sure that no lumps are formed. Add the curry powder and mix again. Return the frying pan to the stove, bring the sauce to a boil and cook for five minutes over low heat.



While the sauce is being cooked, wash and clean the apple, rub itit on a fine grater and add to the boiling sauce. In an almost ready sauce pour lemon juice (better freshly squeezed) and mustard. Before serving, we fill the curry sauce with cream and serve it hot.



Curry sauce: option 2



You can prepare a curry sauce and based on other products, say tomato paste and orange juice. This version of the sauce is good to serve with fried potatoes or fried meat. To prepare the sauce we need the following ingredients:



  • 250 ml of orange juice

  • 125 grams of tomato paste

  • 2-3 tbsp. l. curry powder

  • 1-2 tbsp. l. olive oil

  • 1 tsp. ground cayenne pepper

  • 1 broth cube

  • pinch of sugar

  • salt, ground black pepper - to taste


Pour the olive oil into the saucepan and warm it up. Add tomato paste, mix. After a couple of minutes, pour the spices (curry, cayenne pepper), mix again and cook for about three minutes. Pour in the orange juice and add the broth cube. Stir and cook for another 3-5 minutes. Solim sauce to taste, add sugar and pepper and cook a little more (the sauce should boil and not be too liquid).



Curry sauce: option 3



If there is no time to cook the curry sauce, you can take the "quick" option on the basis of the most ordinary mayonnaise. To prepare such a quick sauce, we will need such products:



  • mayonnaise - 100 g

  • curry powder - 20 g

  • canned pineapple - half ring

  • onion, salt, pepper - to taste


To make the sauce, you just needmix all the ingredients in the blender until smooth. This sauce is not used in cooking, but is served to ready-made dishes. If you have five extra minutes, it's better to cook homemade mayonnaise as a basis for the sauce, instead of buying.
