Perhaps, "Carpathians" - one of their most famous cakes without baking. For its preparation we will need:



  • square cookies - 500 g

  • cottage cheese - 500 g

  • Butter - 150 g

  • sugar - 1 tbsp.

  • milk - 0.5 tbsp.

  • cocoa - 2 tablespoons

  • Vanilla and dried fruits - to taste

  • powdered sugar for decoration


We rub cottage cheese through a sieve and rub it with sugarand oil (in principle, oil can and should not be used). We divide the curd mass into two parts. In one we add cocoa, in another - vanilla and dried fruits (raisins, dried apricots, prunes). You can do without dried fruits or replace them with coconut shavings.



We spread the food film or foil on the table. Lay out on it a square of cookies the size of 6x6 squares (some lay out a rectangle 3x6). Each biscuit must first be dipped in milk (it can be replaced with pre-cooked coffee).



On the layer of cookies, carefully lay out the layerwhite curd filling thickness of about 1 cm. On curd again lay out the cookies, and on it - cottage cheese with cocoa. Then make another layer of cookies. The top layer should be curd. We do not smear it, but stack it on the central row of cookies.



Now the most difficult thing: gently lift the edges of the film or foil and connect them so that the cake takes the form of a triangular slide. Sprinkle the cake with powdered sugar and put in the refrigerator for at least half an hour.



Cake without baking "Bird Milk"



Probably everyone knows the delicate taste of the cake or sweets "Bird's Milk". A cake without baking from cream cheese mascarpone will help you remember this taste of childhood. To prepare it, we'll take:



  • sour cream - 400 g

  • mascarpone - 250 g

  • low-fat cream - 150 ml

  • sugar - 1 tbsp. 4 tbsp.

  • milk - 1 tbsp.

  • gelatin - 30 g

  • cocoa - 4 tbsp.


10 g of gelatin is poured into a glass of cold water. Let's brew to make gelatin swollen. Meanwhile, stir 4 tablespoons. sugar with 4 tablespoons. cocoa powder. Add the mixture of sugar and cocoa to the gelatin and warm it up a little, so that the gelatin is dissolved. It is important not to allow the mixture to boil, otherwise gelatin will lose its gelling properties. Pour the mixture into the cake mold and put it in the fridge for freezing.



Fill the remaining 20 g of gelatin with a glasscold milk. We set it aside to give the gelatin a swell. In the meantime, whisk mascarpone, sour cream, cream and a glass of sugar until thick with a mixer. Milk with gelatin is heated and poured into a container with a mixture and continue to whisk until homogeneous. Let the mass cool down for 10 minutes.



We take the form with chocolate jelly and put it into itcheese-milk mass. We put the cake in the fridge so that it stiffens (you can overnight). Before serving, take out the cake from the mold so that the chocolate layer is on top. To make it easier to do this, you can lower the form for a few seconds in hot water.



Apricot cake without baking



This cake without baking is prepared very simply and quickly. An excellent option for the summer, when there is nowhere to put the apricots, but at the stove you do not want to stand because of the heat. To make apricot cake without baking, we will need:



  • apricots - 800 g

  • sugar - 300 g

  • Butter - 200 g

  • Butter biscuits - 200 g

  • egg - 1 pc.

  • vanilla - 0.5 tsp.


We beat the butter with 150 g of sugar. Add ground muffins, vanillin and egg. We mix it to a homogeneous state. We take a demountable form, we moisten it with water, we put into the form the mass obtained and put the refrigerator.



From the remaining sugar and apricots we prepare mashed potatoeswith a blender. Cover the cake with a thick layer of apricot puree and again put in the refrigerator for 3 hours. When the cake is cold, we remove the mold and put it on the dish. You can decorate it with whipped cream.
