Stuffed carp



Fish dishes for the New Year from carp will not leave anyone indifferent. Stuffed with mushrooms carp will become a real highlight of your festive table. For its preparation we take (for 1 kg of carp):



  • fresh champignons - 200 g

  • ground breadcrumbs - 3 tbsp.

  • melted butter - 2.5 tbsp.

  • eggs - 2 pcs.

  • sour cream - 0,5 tbsp.

  • extinguishing oil

  • salt, pepper - to taste


Mushrooms are cleaned, washed, cut into thinslices and piled in a saucepan. Add the same oil, salt, pepper and pour 2 tablespoons. water. Cover the saucepan with a lid and simmer the mushrooms for 10-15 minutes over low heat.



Carp is cleaned, gutted and rubbed with salt inside andoutside. Butter the butter with raw egg yolks, ground breadcrumbs and whipped into the foam with proteins, fill the resulting mixture with mushrooms, salt if necessary and mix thoroughly.



Fill the abdomen of the carp with mushroom stuffing and sew it. Lay the fish on a small baking tray, pour melted butter, put in the oven and bake for 40-45 minutes. Periodically, the fish should be watered with the resulting juice. Five minutes before the ready we pour carp with sour cream.



Before serving, we remove the thread from the carp, transfer the fish to a dish and garnish with fried potatoes and greens.



Salmon with dried fruits and nuts



Fish dishes from salmon are always out of competition, because this is an unusually tasty fish. We suggest you prepare a salmon baked under dried fruits and nuts for a festive table. To prepare this dish for the New Year we will need:



  • Salmon fillet - 1,5 kg

  • dried apricots - 200 g

  • prunes - 200 g

  • walnuts - 200 g

  • mayonnaise - 200 g

  • carrots - 1 pc.

  • onions - 1 pc.

  • vegetable oil for seasoning

  • salt to taste


Lightly salm the fillet of salmon. Take a deep frying pan, lined with a double layer of foil and spread the fish fillets into it. Dried apricots and prunes in cold water for about half an hour, then squeezed and cut into small pieces. Nuts are cleaned from the shell and finely chopped.



Onions are cleaned and cut into small cubes. Carrots are cleaned and three on a large grater. Let's pass the vegetables in vegetable oil. We combine vegetables, nuts, dried fruits and mayonnaise, spread over the salmon.



Bake the salmon for 25-35 minutes in a preheated oven. We serve to the table directly in the foil.



Perch with cherries



You surely tried meat dishes with cherrysauce, but cherries can be added to fish dishes. Why not cook a perch with a drunken cherry? But remember, for preparing this dish for the New Year, you need to take in advance, a couple of days before the holiday. We need the following ingredients:



  • perch - 1.2 kg

  • ripe cherry seedless - 0.5 kg

  • onions - 1 pc.

  • white dry wine - 0.5 tbsp.

  • buckwheat flour - 5 tbsp.

  • vegetable oil - 4 tbsp.

  • flour - 2 tbsp.

  • salt to taste


For a ripe cherry, of course, now is not the season,so we take the frozen and defrost it. We merge the excess liquid, we slightly absorb the berries and put them in a warm place for 2-3 days, so that the cherry will slightly ferment.



After this time, the perch is cut into piecesand add it to a bowl. Onions are cleaned and chopped. Salt fish to taste, add onions, pour in wine and fermented cherry juice, cover and leave to marinate for a couple of hours.



Pieces of perch promakivaem napkins, crumble inflour and fry in warmed vegetable oil on both sides (about 6 minutes for each side). Add the onion from the marinade and cook the fish under the lid for another 4 minutes. Finally, we spread on the perch a fermented cherry and heat it on high heat to a boil.
