Depending on the circumstances, mushrooms with vegetables can be a snack, and a side dish, and a completely independent second course.






Stewed mushrooms with vegetables



To prepare mushrooms stewed with vegetables, we need to take the following ingredients:



  • 1 kg of champignons

  • 2 medium eggplant or 1 large eggplant

  • 2 tomatoes

  • 1 head of onions

  • 2-3 tablespoons sour cream

  • 0.5 tbsp. vegetable oil (better than olive oil)

  • greens, salt - to taste


Thoroughly wash my vegetables and mushrooms, brush the onions. Cut champignons into not too small pieces and fry them on high heat in a small amount of butter.



While the mushrooms are stir-fried, cut the eggplant into cubes, sprinkle with salt and leave for 5-7 minutes, so that the bitterness is gone. Then add the eggplant to the mushrooms and pour the remaining oil in the vegetables.



Onions and tomatoes are sliced, we chop the greens finely. First add to the mushrooms with eggplant onions, after 5 minutes - greens and tomatoes.



We give mushrooms with vegetables to fumble for 20-30minutes. Water at the same time do not need to add: vegetables and mushrooms are allowed to juice, and an excellent gravy is formed. Ready-made stew is better not immediately, but let it brew, then it will become even more delicious.




Stewed mushrooms with vegetables combine well with spaghetti, buckwheat, rice and boiled potatoes.



Fried mushrooms with vegetables



Mushrooms with vegetables can not only be stewed, but also fried. To prepare this dish we will need:



  • 300 g of champignons

  • 2 heads of onions

  • 1 carrot

  • 4-5 cloves of garlic

  • cooking oil for frying

  • greens and salt - to taste


Mushrooms and carrots mine and clean, onions and garlic is cleaned. Onions cut into half rings, mushrooms and garlic - thin plates, carrots - thin straws. Greenery finely chopped.



We heat the vegetable oil in a frying pan, put onions and garlic. Fry them over medium heat until a strong smell begins to be felt. A little salt.



Add the carrots to the frying pan. Fry the vegetables over low heat, stirring constantly, until the carrot is soft. Solim to taste.



We fall asleep in a pan of champignons and fry for another 2-3 minutes. We try the prepared dish and if necessary dosalivayem. We serve to the table, sprinkled with chopped herbs.



Mushrooms with vegetables in the oven



Another way of cooking mushrooms and vegetables is to bake them in the oven. To prepare this dish, we'll take:



  • 500 g of cauliflower

  • 200 g champignons

  • 100 g of cherry tomatoes

  • 2 zucchini

  • 2 medium aubergines or 1 large eggplant

  • 2 heads of purple onion

  • 2 Bulgarian peppers (red and yellow)

  • 1 head of garlic

  • 40 ml of olive oil

  • 2 tablespoons balsamic vinegar

  • 0.25 tsp. salt

  • ground black pepper - to taste


Champignons are cleaned and washed. My pepper, tomatoes, zucchini and eggplant. Zucchini and eggplants cut into circles (thickness - about 2 cm). Onions are cleaned and cut into quarters. At pepper we delete a peduncle and a core and we cut it or him by strias. Garlic is cleaned and divided into lobules, and cauliflower - into large inflorescences.



Combine the olive oil, balsamic vinegar, salt and pepper and mix to make a sauce. Cut the mushrooms and vegetables in a bowl, pour the sauce and mix well with your hands.



We lay the baking sheet with baking paper. Foil can not be used - the vegetables will stick to it. We put the vegetables on a baking tray and bake in an oven, heated to 150-160 ° C, for 30-40 minutes. Ready vegetables and mushrooms are put on a plate and served to the table in a hot form.
