Georgian tkemali sauce is made from plum tkemali and spices. Do not think that this is such a rare plant - under the exotic name is hidden the most common cherry plum. We offer you one of the many recipes of tkemali sauce.




To prepare tkemali sauce at home, we will need:



  • cherry plum - 1 kg

  • Hot chili peppers - 1 pc.

  • garlic - 1 head

  • coriander - 1 large bundle

  • dill - 1 bunch

  • grape or apple cider vinegar - 1 tbsp.

  • salt - 4 tsp


We get the stones out of the plum and fill the fruit with salt,that they give the juice. Then put the berries with the juice on the fire, bring to a boil and boil for five minutes. If the liquid is small, you can add a little water.



While the cherry plum is boiling, chop peppers, dill, coriander and garlic finely. First add the pepper to the pan, after five minutes - coriander and dill, and two more - garlic. Turn off the fire.



Pour the sauce into a blender and whisk untilconsistency of sour cream. Add vinegar (grape or apple - which is more to taste). You can add more seasonings or salt to taste. Keep the tkemali sauce in the fridge.
