To prepare a shish kebab according to the classic recipe you will need:
- lamb (can be replaced with pork) - 1 kg
- onion - 5-6 pieces.
- green onions - 1 beam
- vinegar 3% - 0.5 cups
- tomatoes - 3-4 pcs.
- sauce tkemali - 3-4 tablespoons.
- lemon - 1 pc.
- barberry dried
- lard mutton (if pork shish kebab can be replaced with lard) baked - 20 g
- black pepper powder
- greenery
- salt
Preparation
For a shish kebab take a loin or back leg of lamb or pork.
Cut the meat into small pieces, put it in a container.
Part of onion finely chop, part - cut into rings.
Meat salt, pepper, add onion, finely chopped, vinegar and juice of one lemon. Stir and place in a cold place for marinating for 2-3 hours.
When the meat is marinated, the pieces are strung on the skewers, alternating with their onion rings. Lubricate the pieces of meat with melted fat.
Shish kebab must be fried over smoldering coals, without flame. It is necessary to turn the skewer so that the meat is roasted evenly. The meat is ready in 10-15 minutes.
When serving, the shish kebab is garnished with green onions, tkemali sauce, tomatoes. You can decorate the shish kebab with herbs and dried barberry.
