White sauce

The sauce is able to make from the most ordinary dish a masterpiece of cooking. White sauce gives dishes a gentle, pleasant creamy taste. From the basic recipe of white sauce, you can make a lot of new recipes, adding to it various spices, greens, seafood, mushrooms or whatever the hostess wishes.





White sauce: base


White sauce for this recipe will be a very delicate creamy addition to your dish. For Preparation of the basic white sauce you will need:


  • 300 ml of fresh milk;

  • 25 g of butter;

  • 25 g of flour;

  • salt, pepper to taste.


Melt butter in a saucepan, addflour. Stir and simmer stirring over low heat for a minute. Remove from heat and gradually add milk and spices. Then bring to a boil and cook for 2 more minutes.



White sauce with sour cream


For cooking, you will need:


  • 50 g of flour;

  • 1 stack. sour cream or thick cream;

  • 50 g of butter;

  • salt and spices to taste.


In a dry frying pan, brown the flour until goldencolors. Slightly cool and add butter. Then gradually add the sour cream, stirring well. Put the frying pan on the fire, bring to a boil and add the spices. Cook another 5 minutes at low heat. If required, strain the sauce to rid it of lumps.



Variations of white sauce


For the first or second recipe, prepare a white sauce. Adding to it different products and spices, you can diversify your dining table.


  • Cheese white sauce. In a hot sauce, add 100 g grated cheese. Stir well and cook over a small fire stirring until the cheese melts.


  • Sauce with herbs. To taste, add dill or parsley, or other greens, into the white sauce. It gives the sauce a special flavor and beautiful color.


  • Mushroom sauce. Fry in butter 50-100 g finely chopped mushrooms. Add 1 tbsp. l. lemon juice and cook for 5 more minutes. Cooked mushrooms add to white sauce and stir.


  • Sauce with capers. In the prepared white sauce, add 1 tbsp. l. crushed capers and 1 tsp. lemon juice.


  • Onion sauce. Peel and finely chop 1 large onion. Fry it in butter for 7 minutes. Onions with the remains of butter are added to the flour instead of butter during the preparation of the sauce.


  • Sauce with shrimps. In the finished white sauce, add 75-100 g of peeled shredded shrimp and a half teaspoon of cayenne pepper. Shrimps are ideally combined with a white sauce, which can simply be served with shrimp.
