Duck Peking

- pancakes:
- flour - 2 cups
- water (boiling) - 1 glass
- sesame oil - 1 tsp
Preparation
Prepare a duck. Rinse the plucked and peeled carcass of a duck, twice with scalded boiling water. Debate the duck with a paper towel, rub it outside and inside with wine, rub it with salt and leave it in the refrigerator for 12 hours, ideally in a vertical position.
The next morning mix honey, soy sauce and sesame oil. With the resulting mixture, grease the duck and leave for an hour. After an hour, pour the remaining sauce inside the carcass and sew up the holes.
Heat the oven to 220 ° C and place the duck on the grate, having preliminarily put a pan under the grate (pour a little water) - to collect the juice and fat formed during the frying of the duck.
Cook Peking duck should be in the flowapproximately 1.5 hours, reducing the oven temperature to 190 ° C by the end of cooking. The finished duck has a bright, dark golden skin, the transparent juice that flows out when piercing.
For the preparation of pancakes, brew the flourboil, knead the dough. From the dough roll "sausage" four centimeters thick, cut into 12-16 pieces. From each piece of dough make a cake with a diameter of 7-9 cm. Leppe sesame oil and cover with a second cake. "Double" cake rolled and fry in a pan until the appearance of brown spots.
To the table are served pieces of duck with skin,pancakes, peeled and cut into thin strips of cucumbers, Hoixin sauce, feathers of green onions. At the pancake, spread the sauce, lay onions, a slice of cucumber, a slice of duck and, turning a pancake, eat.
