Almond-cream caramel

- corn syrup light 340 g
- unsalted butter - 115 g

- vanilla - 0.5 tsp.
- ground almonds - 45 g

Preparation
- Lubricate the form with butter.
- In a small saucepan, heat the cream. Half of the warmed cream is mixed with sugar and syrup in a large saucepan. Bring the mixture to a boil over medium heat. To prevent the crystallization of sugar, a brush, washed in cold water, should be scraped off the edges of the pan.
- The rest of the cream is slowly added and stirred for approximately five minutes.
- Gradually add butter, 1 teaspoon. Reduce the heat when the temperature of the mixture reaches 110 ° C.
- Remove the pan from the heat after a few minutes and leave it for 10 minutes.
- In the mixture add vanillin, almonds, salt, mix thoroughly and pour into a mold.
- Hardened mass is cut into small squares and served to the table.
