A simple recipe for colored sugar nuts
Nuts in colored sugar glaze - a treat,which will appeal to adults and children. To make it, you need a minimum of ingredients and only half an hour of time - but the result will exceed expectations. Nuts are an excellent dessert for tea drinking, decor for cakes, rolls and cakes, a cute souvenir for a loved one.
Ingredients:
Sugar - 815 g
Roasted nuts - 400 g
Water - 345 g
Honey (glucose syrup) - 60 g
Food coloring, 2 tsp. spices to taste
Cooking method:
In the bowl, combine the water with the sugar. Glucose syrup (honey) is necessary to contain the crystallization of the syrup - this is not an obligatory component, but it is better to use it in the mixture. In the sugar mass, add the dye in the right amount and heat until the grains of sand dissolve. The mixture can not interfere
Cooking nuts should be portioned. Pour 165 grams of syrup into a saucepan with a thick bottom and cook until the temperature reaches 120 degrees. Measure the mixture with a thermometer by monitoring the boiling process. In the syrup, you can add a couple of teaspoons of cinnamon, nutmeg or vanilla
When the mixture reaches the desired temperature, pour innuts. It is better to choose almonds or hazelnuts - they will not crumble when cooking. Actively mix the contents of the saucepan, collecting the sugar mass from the bottom so that it envelops each nut
The syrup should evenly cover the nuts, layer by layer, caramelizing them
After a few minutes, the sugar will begin to crystallize - then pour the nuts into a cool and dry container. Then quickly clean, wash, wipe dry the sauté pan and repeat the procedure again
Let the nuts cool down, pour them into rough dishes (from clay, cast iron) and mix for ten minutes. Nuts will become smoother and more rounded
The more layers of caramel on the nuts - the finer the delicacy
