Exquisite pleasure: a recipe of chocolate dessert with salt

Ingredients:
Quality dark chocolate at least 70% (also milk can be) - 400 g
Cream not less than 33% - 200 g
Yolks - 3 pcs.
Water - 40 g
Salt grind and salted pretzels
Cooking method:
Melt the chocolate. Use a simple technique: put pieces of chocolate in a dense plastic bag and lower them into a bowl of boiling water. Periodically take out the bag and knead the chocolate to evenly melt it. Bringing the pieces to a homogeneous mass will take about 10 minutes - so you can avoid overheating and combustion of the product
Pour the cream into the saucepan and bring to a boil over medium heat
Separate the yolks from the whites and lightly beat the yolks with hot water
Place the egg mixture in a water bath for several minutes, stirring with a whisk. Take care that the yolks do not start to thicken, turning into an omelette
Whisk the yolks at the maximum speed of the mixer for three minutes. Then add the chocolate mixture and whisk again
Add in a lot of cream and beat well with a mixer
In the form lined with parchment, pour the resulting mousse, level the surface and sprinkle with large salt
Decorate the dessert on top with salted pretzels or crackers and place in the refrigerator for several hours or overnight - so the chocolate texture will become even more velvety
