Veprevo knee in Czech - step by step recipe



Bathhouse, beer and delicious meat Czech snack! What could be better? The main secret of this dish lies in the correctly selected meat. Pork shank should be fresh and belong to a young animal. Its size can vary depending on the number of servings. The best option is a piece of meat, starting from the middle of the shin and ending with the middle of the thigh, weighing about 1.5 kg.

Necessary ingredients:




  • pork shank - 1, 5 kg


  • dark beer - 2 l


  • black pepper - 10 peas


  • salt - 1 tbsp. l.


  • marjoram -1/2 tsp.


  • grated ginger - 1 small root


  • bay leaves - 5 pcs.


  • chopped parsley - 1 tbsp. l.


  • garlic - 3 cloves


  • honey - 1 tbsp. l.


  • soy sauce - 20 ml.


  • vegetable oil - 2 tbsp.




Step-by-step instruction




  1. Rulk thoroughly wash and clean. Let's dry the meat with a towel.


  2. In a large pot, lay out the shin and fill it with a fragrant mixture of the following spices: salt, pepper, ginger, marjoram, parsley and bay leaf.


  3. Fry the meat with 2 liters of dark unfiltered beer and put the pan on a slow fire. Veprvo knee will cook for 2.5-3 hours under the lid.


  4. Let's cool the shank and put it on a baking sheet. We will dry meat with a mixture of honey, garlic, black pepper and salt. Add the vegetable oil and send the pulp in a preheated oven to 180 degrees for 1.5-2 hours.



Important! To make the meat juicy with a beautiful brown crust, do not forget to water it with a grease every 15 minutes.






Fried pork shank - step-by-step recipe with photo



This is a lite version of the famous CzechVeprevo knee, which tastes no worse than the original, and prepare a little faster. Instead of beer, ordinary water is used in this recipe, therefore it is possible to eat such baked meat for pregnant women and children. In addition, this version of cooking Veprevo knee can be used for both a large shank, and for a small one.






Necessary ingredients:




  • pork shank -1, 5-2 kg


  • onions - 3 pcs.


  • bay leaves - 1 pc.


  • salt - 4 tsp.


  • peppercorns - 6 pcs.


  • Dijon mustard - 100 gr.


  • honey - 70 g.


  • soy sauce - 1 tbsp. l.


  • garlic - 8 denticles


  • paprika - 1 tsp.


  • black pepper - 1 tsp.


  • cumin - 1 tsp.


  • fat or fat - 50 gr.




Step-by-step instruction




  1. In a large saucepan pour water and add 1bulb, bay leaves, 2 tsp. salt and sweet pepper. When the water starts to boil we put the washed pork rudder in a saucepan. Boil Veprevo knee will be on a slow fire 2-2,5 hours, removing the scum with a noise.

    Important! The pan should be deep enough, and the water should cover the meat completely. Do not forget to add water during cooking so that the shank is always under water.



  2. In 2 hours we'll get the meat and let it cool. Prepare the marinade. To do this, in a shallow dish mix mustard, soy sauce, honey, chopped garlic, paprika, 2 tsp. salt, cumin. Stir and apply the mixture to the meat. We shall make shallow incisions along the entire length of the shank and impregnate them with garlic. Put on the baking sheet meat, chopped onions, the remaining garlic and slices of fat. Fill all 500 ml of broth.


  3. We cook the baked veprevo knee at 200 degrees for about 1 hour. After half an hour we will open the oven and turn the wheel to the other side so that the meat is baked evenly.


  4. We serve a ready dish hot with pickled cucumbers and garlic.
