There are a lot of variations of cranberry sauce: from wine, honey, vinegar, onion, American sauce, black sauce, etc .. Depending on the additional ingredients and spices used, cranberry sauce can add piquancy, sweetness, and spiciness to the meat. The recipe, which we offer you to master first, is a universal option. Its main feature is that in itself it is already a full-fledged cranberry sauce, but it can be the basis for other variations of the cranberry sauce.





Necessary ingredients:




  • fresh cranberries - 350 gr.


  • sugar - 3/4 cup


  • orange peel - 1 tbsp. l.


  • freshly squeezed orange juice - 1/2 cup


  • cinnamon - 1 stick




Step-by-step instruction




  1. Just note that you can prepare cranberry sauceboth fresh and frozen berries. In this recipe, we suggest using fresh cranberries, as it gives the sauce a brighter color compared to the frozen berries. Cranberries, we remove the tails and spoiled berries, we throw them into a colander - no extra liquid is needed for our cranberry sauce.


  2. While the berries dry out, let's take care of the orange peeland juice. To do this, carefully wash 1 large or 2 medium orange. First, we will rub on a small grater of zest (we need 1 tbsp), and then make juice (approximately 150 ml).


  3. In a deep saucepan or stew with a thick bottom send the berries of cranberries, sugar, zest and cinnamon. Fill all the ingredients with orange juice and mix.


  4. Put the cranberry sauce to cook on a slow fire, do not forget to stir it from time to time.


  5. Let's bring the cranberry sauce to a boil and continue cooking for about 10 minutes. The mass should thicken: berries break, and sugar and lemon juice will make the cranberry sauce even more dense.


  6. When the cranberry sauce finally thickens, remove it from the heat and let it cool. We serve cranberry sauce to any baked or roasted meat, abundantly watering the chosen dish.







Spicy cranberry sauce to duck - step by step recipe with photo



Cranberry sauce perfectly matches duckmeat. Its sweet and sour taste perfectly emphasizes juicy fried duck meat. And if in a sauce from a cranberry to add still and a chili pepper, he will give to a bird unusual sharpness and piquancy.





Necessary ingredients:




  • fresh or frozen cranberries - 350 gr.


  • sugar - 200 g.


  • water - 1/3 cup


  • lemon juice - 3 tbsp. l.


  • lemon peel - 1/2 tsp.


  • chili pepper - 2 pcs.


  • salt - 1/2 tsp.


  • tequila - 2 tsp.

But not only meat and poultry are "friends" with cranberrysauce. Fish, baked in the oven, is also perfectly combined with cranberry sauce. Particularly good is a combination of red fish varieties with a spicy cranberry sauce, in which fresh ginger and rosemary are present.





Necessary ingredients:




  • cranberries -300 gr.


  • water 100 ml.


  • sugar - 200 g.


  • orange - 1 pc.


  • ginger root - 1 pc.


  • rosemary - 3-4 branches




Step-by-step instruction




  1. Wash and dried cranberries pour into a deep saucepan.


  2. Add sugar to the berries.


  3. Orange and cleanse the peel. From the orange squeeze out the juice (you can use a blender) and together with the zest we add to the cranberries.


  4. The root of ginger is peeled and finely chopped. If you want ginger pieces to be felt in cranberry sauce, cut the root fairly large.


  5. Add ginger to the future cranberry sauce, pour out water and mix. On medium fire bring the cranberry sauce to a boil and cook for 15 minutes.


  6. Approximately 2-3 minutes before the end of cooking, add cranberry sauce to a couple of branches of fresh rosemary. We remove the cranberry sauce from the fire and let it cool before serving.







Cranberry sauce for meat from chef Hector Jimenez-Bravo - step by step instruction



This recipe is suitable not only for red meat,but also to the bird and the fish. Cranberry sauce from chef Ector Jimenez-Bravo is spicy and full. But despite the large amount of spices, this cranberry sauce has a rather mild taste and a very beautiful color.

  • cranberries - 500 gr.
