A classic recipe for a delicious tobacco chicken

Chicken of tobacco is a dish of Georgian cuisine. It is more correct to call it "tapaka" (from "tapa" - frying pan for cooking). This simple dish can cook anyone, even a man, usually able only to fry potatoes and eggs. So, let's get started.
Necessary ingredients
- chicks - 2 pcs or about 600-800 g
- olive oil - 50 ml
- coriander (dried coriander) - 1 tsp.
- dried basil - 1 tsp.
- wine red dry - 150 ml
- black pepper powder - ½ tsp.
- garlic - 1 slice
- sour cream - 100 g
- salt of sea - ¾ tsp.

Cooking method
- Take small chickens, gut the carcass, wash it with water and drain it. Then cut them along the middle of the breast.
- Turn the carcases upside-down with the hammer for meat to give a flat shape. This is necessary to soften the meat and to fry it evenly.
- Then proceed to prepare the marinade. Despite their great variety, the choice is better to stop on the classic version of wine and spices. To do this, mix together the wine, basil, coriander, pepper and a half teaspoon of salt.
- We put the chickens in a bag, pour the marinade on top and leave for 1.5-2 hours.
- A little warm up the frying pan, pour oil on it. The chicken should be laid down. After this, it is absolutely necessary to press down the meat with some load and fry for 15 minutes on a small fire.
- After the peel is browned, turn the meat over and fry the other side for another 10-15 minutes. Remember about cargo and small fire.
- After cooking the meat, proceed to sour cream sauce. To do this, rinse the garlic in a mortar with the rest of sea salt, add the sour cream and mix these ingredients.
- Tasty chicken tobacco is ready to serve!
