Take:



  • 5 kg of cucumbers,

  • half a kilo of onions,

  • 1 teaspoon of dill (seeds),

  • 250-300 grams of vinegar (9%),

  • 2.5-3 tablespoons of table salt,

  • a couple of laurel leaves,

  • 10 peas of black fragrant pepper

  • 3 tablespoons of sugar.

  • If desired - greens tarragon.


1. Cut cucumbers into circles 7-10 mm thick. Add the onions to them and distribute them to the cans, adding pepper, dill and tarragon.


2. Then prepare marinade from 1.5 liters of water, vinegar, salt, sugar and sweet pepper. Vegetables fill with marinade and sterilize for 10-12 minutes at a temperature of 85-90 degrees.


3. Bottom the cans with sterilized lids, flip them down and wait until they cool down completely. Keep in a dark place.

  • 250 grams of garlic and as much - onions,

  • large table salt - 100 grams,

  • 250 grams of sugar

  • 150 grams of vinegar (six or nine per cent).


A little tip:


- Choose cucumber varieties suitable for canning and do not use salad varieties. Cucumbers can be selected slightly overgrown.


- Do not spare garlic for cooking, it will serve not only as a seasoning, but also as a good preservative.


Preparation:


1. Cucumber chop into small pieces of 0.5 cm or slightly more.


2. Add the onion, previously cut into thin strips, and the garlic, passed through the garlic.


3. Mix all the vegetables in a large enamel or glass container and add the sugar, vinegar and table salt to the resulting mixture. Leave in a cool place for 10-12 hours.


4. After this time, add the cucumbers to the prepared cans (0.5 or 1 l), close them with lids and roll them up. How to prepare cans for canning: rinse thoroughly, put in a microwave for a couple of minutes.


Cucumbers with onions for winter


Ingredients (calculation for 0,5 l jar):



  • 400 grams of cucumbers,

  • 40 grams of onions,

  • 10 g of herbs (dill and parsley),

  • a pod of hot red pepper,

  • 20 g of acetic acid (6%),

  • 2 tablespoons of vegetable oil,

  • 2 peas of sweet pepper,

  • 5-6 grams of table salt

  • 2 cloves of garlic.

1. Cucumbers must be thoroughly washed, cut from both sides and cut into thin slices, preferably at the same time, so that their thickness does not exceed 1 cm.


2. Prepare the garlic by cutting it into 4 pieces.


3. Peel onions, cut into slices half a centimeter thick. Chop parsley and dill.


4. Now you need to place all the cooked vegetables and herbs in enameled dishes, add salt and acetic acid to the mixture, mix everything thoroughly.


5. At the bottom of the pre-prepared clean jars it is necessary to put hot pepper and a couple of spoons of sunflower oil. Next, a mixture of vegetables is put on top, the cans are covered with lids and sterilized at 100 degrees for 11-12 minutes. After that, the cans should be rolled up, turned upside down and allowed to cool.
