1. Composition of products:
- 1 kg of cucumbers,
- 300 grams of carrots,
- 1 kg of tomatoes,
- 1 kg of onions,
- 1 kg of sweet pepper,
- 2 tablespoons of salt,
- 0.5 cups of sugar,
- 1/3 of acetic essence,
- vegetable oil.
We cut one kilogram of cucumbers in circles, andalso 300 grams of carrots. Mix the vegetables. In small pieces we cut a kilogram of tomato, as much onions and bell peppers. Now put all the cut products in a large basin or pan. Add to the vegetable mixture a glass of vegetable oil, two tablespoons of table salt and half a cup of sugar.
We mix the resulting mixture and cook about 20minutes. At the end of cooking, you need to add a third of a tablespoon of acetic essence. The resulting hot mixture is spread from the pan to the jars and rolled up. Salad of cucumbers and pepper is ready. Now it remains to turn the jars and wrap them in a towel, waiting for complete cooling.
2. The ingredients for the second recipe are as follows:
- 5 kilograms of cucumbers,
- 1 kilogram of Bulgarian pepper,
- 3 fennel (umbrella),
- 200 grams of horseradish (root),
- 9-10 sheets of currant,
- as much - cherry leaves,
- 3 oak leaves,
- a glass of sugar,
- half a cup of salt,
- pepper-peas - 9 pcs.,
- bay leaves - 8-9 pieces.
- 400 ml of 9% vinegar.
First you need to soak the cucumbers in a coldwater and keep them in it for 3 hours. During this time, prepare the sweet pepper, cut it with rings. At the bottom of the cans you need to lay spices and all the greens. Pulling cucumbers out of the water, you should cut off their tips and put cucumber in three three-liter jars, alternating with horseradish and pepper.
Pour the resulting mixture of vegetables with boiling water,cover with pre-sterilized lids and leave for about 10 minutes. After ten minutes, pour the added water from all three jars into a saucepan, pour salt and sugar into it, bring to a boil, and then pour in 9% vinegar. Banks with cucumbers and pepper then need to fill with this marinade and then roll up with sterile caps.
3. Salad from pepper and cucumbers "Lightly salted." Ingredients:
- 3 kilograms of cucumbers,
- sweet Bulgarian pepper 1 kg,
- 2-3 tablespoons of salt,
- vinegar 9% - 8 tablespoons,
- hot pepper (pods),
- sunflower oil and dill umbrellas.
Clean cucumbers, and then cut into thin (about3-4 mm) with slices, sweet pepper cut into pieces. The vegetable mixture is then transferred to a basin or a pan. Sypem salt and add the vinegar. Now the mixture needs to brew for several hours, so that it gives juice. We use liter jars, at the bottom of each of which we pour 4 tablespoons of oil and put pieces of hot pepper.
We spread the vegetable mixture together with the juicebanks, interlacing with dill umbrellas. Banks should be densely filled with vegetables. Sterilize the jars with the contents for about 20 minutes, then roll. We turn the cans with the ready salad upside down, wrap it and let it cool to room temperature. To eat this salad is recommended after a couple of months - during this time it will turn out very delicate and tasty.
