Ice cream without cream
Usually homemade ice cream (if only thisice cream in its traditional sense, rather than fruit ice) is cooked on cream. But cream is quite an expensive product, and some do not use cream from dietary considerations. Therefore, the Country of Soviets will tell you how to make a home ice cream without cream.</ p>
Simple ice cream without cream
The easiest way out of the situation is to replace the cream with milk. Here is one of the simplest recipes for homemade ice cream on milk. We will need the following ingredients:
2.5 tbsp. milk
1 tbsp. Sahara
4 egg yolks
Vanilla sugar - to taste
Sugar is sieved, mixed with egg yolks,add vanilla sugar and carefully triturate into a foam. The resulting mixture is put into a saucepan, diluted with hot milk and put on a small fire. Heat until thick, then remove from heat, filter and cool.
Chilled mass is shifted in tightlya closed food container and put it in the freezer. We freeze 4-5 hours, every half hour, an ice cream should be extracted from the refrigerator and mixed thoroughly, so that it does not form ice crystals.
Ice cream without cream with starch
You can add starch to the ice cream, it performsrole of the stabilizer. The stabilizer is needed to ensure that the ice cream is more homogeneous and does not produce large ice crystals. If you use starch, you do not have to constantly mix ice cream when freezing. To prepare ice cream without cream with starch, we take:
500 ml of milk
1 egg yolk
50 g of sugar
25 g of starch
a bag of vanilla sugar
Milk is divided into two parts: 300 ml and 200 ml. Most of it is mixed with sugar and slightly heated. The rest of the milk is mixed with starch, we add it to milk with sugar and boil well. Then remove the milk from the fire, cool it and add vanilla sugar. In the last turn, put the yolk, carefully mix, cool and freeze.
Chocolate ice cream without cream
This fragrant ice cream has a very soft texture, it stretches and looks like an ice cream by its consistency. For its preparation we will need:
50 g of sugar
50 g chocolate without additives
20 g of powdered sugar
20 g of water
20 g milk
2 eggs
In a small saucepan pour out the water and pour insugar. We put on a strong fire and boil until we get a thick syrup ("hard ball" test). Whisk the whiskers of the mixer in a foam and, without stopping whipping, pour into boiling syrup.
In a saucepan from the syrup (you can not wash) pour the milk and put the chocolate broken into pieces. We put on the fire and heat, stirring constantly, until the chocolate dissolves.
Whisk yolks with sugar powder to the state of high whitish foam. Continuing to beat, pour melted chocolate. The resulting mass is again poured into a saucepan.
We put on a small fire and bring the mass to a thickening, continuously mixing. The thicker the mass, the more active it is to mix it to avoid burning.
Cool the chocolate mass to room temperature and mix it with whipped whites. We pour everything into a container, close it with a lid and put it into the freezer for the night.
Coffee ice cream without cream
Coffee lovers will probably have to taste homemade coffee ice cream. Prepare it very simply, for this we will need:
0.5 liters of milk
1 tbsp. ready-made coffee
0.5 tbsp. Sahara
5 egg yolks
at will - a little liquor
Whisk the yolks with sugar and white. Milk and coffee are poured into a saucepan, put on fire, bring to a boil and immediately remove the fire. In the hot mixture add whipped with sugar yolks, again put on the fire and boil, but do not boil. If desired, add a little liqueur (well suited creamy, chocolate, coffee). Let the mass cool down, pour into a container and freeze, do not forget to mix occasionally.
