Semifredo: Italian dessert from ice cream

In summer, you must indulge yourself with various ice cream desserts. If you want something unusual, be sure to prepare a traditional Italian ice cream dessert called sevenfredo.
Semifredo is a soft homemade ice cream with various fillings (fruits, berries, chocolate, nuts, cookies, candied fruits, etc.) and sweet sauces. The composition of sevenfredo includes fat cream and raw eggs. Note that the eggs must be very fresh. Recipes sevenfredo there is a great variety, the taste of the finished dessert will depend on the additives used.
Semifredo with bananas
To prepare semifredo with bananas we will need such ingredients:
300 ml cream (fat content - 35%)
100 g of fine-grained brown sugar
6 yolks
4 tbsp. l. sweet red wine
3 bananas
juice of one lemon
Yolks, wine and sugar are combined in a refractorydishes and put the dishes on a saucepan with boiling water. We beat the mixture in a water bath for 6-8 minutes, until we get a thick foam. Remove from the fire and let it cool down completely.
Whipped cream into a lush mass. Bananas are cleaned, cut into pieces and blended in a blender until homogeneous, adding lemon juice. We combine together the cream, yolk mixture and banana puree, mix.
The resulting mass is shifted into a plasticcontainer and freeze for 8-10 hours. From time to time, the dessert must be mixed to prevent the formation of ice crystals. Before serving, water the sevenfredo with jam, liquid honey or syrup.
Semifredo with chocolate and mint sauce
Chocolate and mint are considered almost a classic combination. Refreshing mint sauce will perfectly shade the sweet taste of chocolate ice cream. To make sevenfredo with mint sauce, we'll take:
400 ml cream (fat content - 35%)
80 g of sugar
75 g dark chocolate without additives
50 ml of mint syrup
3 eggs
For sauce
150 ml of milk
75 g dark chocolate without additives
4 sprigs of mint
2 tbsp. l. Sahara
For decoration
4 sprigs of mint
Separate yolks from proteins. Whisk the yolks with sugar in a water bath until the sugar completely dissolves. Remove from the fire and, whilst continuing, we add mint syrup to the yolks. We set aside for a while to the side.
Whisk the cream. Dark chocolate (75 g) is rubbed on a large grater, injected into whipped cream and mixed thoroughly. Proteins beat into a strong foam, combine with cream and yolks, mix.
We cover the rectangular shape with a food film(the ends of the film must be hanging out). We pour the finished mass into the mold and cover it with the dangling ends of the film. We clean for three hours in the freezer, do not forget to get and mix from time to time.
For sauce, crush mint, mix with milk and sugar, heat for three minutes and filter. Chocolate melt in a water bath, pour a mild milk into it and mix it in a thin trickle.
We spread the semifredo on glasses or kremankami, pour the sauce and decorate the sprigs of mint.
Citrus semifredo
You can prepare and refreshing citrus semifredo, ingredients for it we need the following:
powdered sugar - 120 g
fatty cream - 1 tbsp.
yolks - 8 pcs.
proteins - 6 pcs.
lemon - 1 pc.
lime - 1 pc.
sea salt - 1 pinch
Whisk the yolks with sugar powder. With lemon and lime, we remove the zest, add the finely grated zest to the yolks. Then squeeze out the juice of half a lime and half a lemon. We put everything in a water bath and bring the mass to a thickening, continuously whisking.
Cream separately beat into a thick foam, connectwith a yolk mass. Protein whisked with a pinch of salt, we put into the mixture of whipped cream and yolks and gently weed. The form is covered with a film and we fill it with the resulting mass. Freeze sevenfredo for at least 4 hours, remembering to stir every hour.
