Tomato sauce for shish kebab



To prepare a fragrant and spicy sauce for shish kebab from tomatoes, we need to take such products:



  • 1 liter. homemade tomato juice with pulp

  • 3 cloves of garlic

  • 3 sprigs of parsley

  • 3 sprigs of dill

  • 3 sprigs of cilantro

  • 3 feathers of green onions

  • 2 sprigs of purple basil

  • 1 tsp freshly ground coriander seeds and ziri (mixture)

  • pinch of sugar

  • red hot pepper, salt - to taste



Tomato juice is salted and mixed. Do not rush and immediately try to salt, first salt a little, let the salt dissolve and only then dosalize, if there is such a need: in thick tomato juice, the salt will dissolve slowly enough.



My greens and very finely chopped. Garlic cloves are pressed with a scabbard or crushed with a knife plane and crushed. We add to the tomato juice chopped greens, garlic and a mixture of cilia (cumin) and coriander.



If desired, dress the sauce with a sharp redpepper (here it is important not to overdo it, because the burning of the pepper is manifested only with time). Add the sugar, mix and let the sauce steep for 15-20 minutes. After this time, you can serve it to shish kebabs.
