Kutya's recipeOn the festive table on Christmas Evemust necessarily stand a kutya - a ritual dish of wheat. In addition to Christmas Eve, Kutya is cooked for the Old New Year (St. Basil's Day) and on the eve of Baptism. Kutya's recipe, yes not one, offers the Country of Soviets.



Traditional ingredients of kutya are wheat, honey and poppy. Now in kutju add also other products -Nuts, raisins and other dried fruits, even chocolate. And for the preparation of kutya, instead of wheat, other cereals - rice, pearl or barley groats are often used. But in Ukraine, rice is traditionally cooked not by Christmas, but by commemorative kutya - kolivo.



The recipe for kutja №1



This recipe kutya - one of the classic, only chocolate here - a tribute to modernity. To cook kutya on this recipe, we will need to take:



  • 2 tbsp. wheat

  • 1 tbsp. poppy

  • 1 tbsp. nuts

  • 100 g of honey

  • 50 g raisins

  • 50 g of dark chocolate


Wheat washed and soaked a fewhours, and then boil on medium heat until cooked. Mack wash, pour boiling water for 20-30 minutes, and then drain the water and grind. For these purposes, you can use a meat grinder, and even better - a coffee grinder, blender or food processor.



Nuts chop and fry until goldenhue. Raisin and dry it. We put in poppy seeds a poppy, nuts, raisins, honey and grated chocolate, everything is mixed. If you do not add chocolate, you will get a traditional kutya. If the kutia seems to you not sweet enough, you can add sugar.



The recipe for kutya №2



This recipe kutya also close to the classic, but the composition of the dish also includes dried apricots. For cooking kutya we take:



  • 1 tbsp. Wheatgrass

  • 1 tbsp. walnuts

  • 0.5 tbsp. poppy

  • 0.5 tbsp. raisins

  • 10 pieces. dried apricots

  • honey (better floral) - to taste


Rinse the wheat croup and soak in a coldwater for 4-5 hours. After soaking, pour off the water and cook the wheat croup in 2 glasses of water over a small fire until ready (about 1.5 hours). The ready porridge is allowed to cool.



Poppy pour boiling water. When the water cools down, merge it and let the poppy 2-3 times through a meat grinder or grind it in a combine. Raisins and dried apricots are poured with boiling water, when it cools, drain the water. We cut dried apricots into small pieces. Nuts are finely chopped. Honey is melted in a water bath (because by January all natural honey, except for acacia or heath, has long been candied).



We shift the porridge into a deep dish, season ithoney, add poppy seeds, nuts, raisins and dried apricots and gently mix. Take into account that kutuyu with honey for a long time can not be stored, it can ferment. Therefore, if you cook kutya in advance, add honey before serving.



The recipe for kutya №3



If you want, you can add fruit or berries from jam to the kut, because the richer your kutya is, the richer and more generous will be the whole next year. For the preparation of kutja with jam we will need:



  • 2 tbsp. wheat

  • 1 tbsp. fruits or berries from jam

  • 100 g of honey

  • salt - to taste


We sorted the wheat and washed it. We pour the wheat into boiling water, again bring it to a boil, throw it back on a sieve and pour cold water over it. We shift the wheat into a clay pot or saucepan, fill it again with water and bring it to a boil. Then tightly cover the pan with a lid and leave to languish in the oven until the wheat is ready. We cool the prepared wheat.



We gently mix wheat with honey and fruitsor berries from jam (you can take just a few types of fruits or berries). If the kutya turned out too thick, you can pour some sweetened boiled water into it.
