To prepare 10 servings of meringue, we need the following products:



  • 5 egg whites
  • 1.25 tbsp. light brown sugar

  • finely chopped peel of one orange

  • 1.5 tsp finely grated grapefruit peel

  • 0.75 parts of l. extract of vanilla

  • 1 pinch of tartar

  • pink food coloring


We take the heat-resistant bowl, pour the egg whites into it, pour out the sugar and the tartar, and prepare the mixture in a water bath, stirring constantly until it becomes warm, and the sugar does not completely melt.



Then beat the mixture with a mixer for about 5 minutes. Start whipping at low speed, gradually increasing it to high. Add the vanilla extract to the whipped proteins.


Half of the meringue is transferred to another container. One half of meringue is mixed with orange peel, and the second - with rind of grapefruit and pink dye. For these purposes, it is convenient to use a rubber spatula.



We take a sheet for baking and put it on itshaped in the form of hearts. Between the molds should be a distance of about 5 cm. We take a small spatula and with it we fill the mold with a protein mass. Then gently remove the molds.



Merengi is baked to hardness in the oven,preheated to 110 ° C. Approximate baking time is 2.5-3 hours. Ready meringues can be stored for up to 3 days at room temperature, by transferring parchment paper and folding into a sealed container.
