Buckwheat pancakes by leaps and bounds



To prepare yeast pancakes from buckwheat flour, we will need:



  • 4 tbsp. milk

  • 2 tbsp. buckwheat flour

  • 2 eggs

  • 20 g of butter

  • 10 g dry yeast

  • salt, sugar - to taste

  • cooking oil for frying


We sift the flour and mix it with dry yeast. We warm the milk a little, so that it is barely warm. We prepare the spoon: we take a large bowl, combine the third part of milk, flour with yeast, salt and sugar in it. Thoroughly mix everything, cover the bowl with a napkin and put it in a warm place, so that the dough rises.



When the dough increases several times in volume,it needs to be mixed and let it come up again. This procedure should be repeated 2-3 times. Then add the egg yolks, the melted butter into the dough and mix again. The remaining milk is brought to a boil, cool to about 40 ° C and poured into the dough, stirring. Proteins whisk in foam, add to the dough and again put it in a warm place for lifting.



Heat the frying pan and grease it with a thin layervegetable oil. Slightly reducing the fire, pour a smooth layer of dough into the pan, bake for about a minute on one side, turn it over and bake it on the second side. Buckwheat pancakes are brittle and fragile, so it's best to turn it not with a spatula, but throw it in a frying pan. If you want the pancakes to be less fragile, mix buckwheat flour with wheat flour in a ratio of 1: 2.



Pancakes are ready to be stacked on a plate. Every pancake should be oiled with vegetable oil. These pancakes eat hot.



Buckwheatless buckwheat pancakes



For the preparation of buckwheat pancakes without the use of yeast we will need:



  • 3 tbsp. milk

  • 1 tbsp. buckwheat flour

  • 1 tbsp. wheat flour

  • 3 eggs

  • 2 tablespoons water

  • 1 des.l. soda

  • 1 tbsp. oils

We mix buckwheat and wheat flour, gradually,In small portions, pour cold milk into the mixture, stirring constantly. Eggs well blend, add to the dough and mix. A full dessert spoonful of soda is dissolved in water and added to the dough just before the baking.



Preheat the frying pan, grease it with oil orfat and bake small pancakes on it. We serve them to the table "with heat, with heat," immediately after baking, watering with melted butter and sour cream, jam or honey.
