Pancakes with cottage cheese
To make pancakes with curd filling, we need the following ingredients.
For pancakes:
- flour - 5 tbsp. with a slide
milk - 2.5 tbsp.
eggs - 2 pcs.
sugar - 1 tbsp.
vegetable oil - 1 tbsp. for the test + 100 g for frying
salt - 0.3 tsp.
For filling:
- fresh cottage cheese - 300 g
sour cream - 2 tablespoons
sugar - 2 tbsp.
2 egg yolks or 1 egg
salt to taste
Beat with whisk or with a mixer the eggs withsugar and salt. In the whipped mass, pour in the milk and pour in the flour. Thoroughly mix everything, add vegetable oil and mix again. In the finished test there should be no lumps. Bake thin pancakes with vegetable oil. In order to evenly grease a frying pan, you can use a fork with a pitted half of raw potatoes.
Then we prepare the filling. To do this, rub cottage cheese with sour cream, yolks and sugar, salt to taste. To make the filling more flavorful, you can add a lemon or orange peel to it (it must first be dried, grinded and sifted), raisins or candied fruits.
At the center of each pancake, we put the dining roomspoon of curd filling and wrap the pancake with the envelope. The resulting envelopes are fried from both sides in oil or oiled, put in enamel or ceramic dishes, cover with a lid and put in a non-flammable oven.
Pancakes with cottage cheese and cherries
To prepare pancakes with cherries and cottage cheese, we need the following ingredients.
For pancakes:
- milk - 500 ml
flour - 200 g
eggs - 2 pcs.
vegetable oil - 2 tbsp.
sugar - 1 tbsp.
baking powder - 2 tsp.
salt to taste
oil for frying
For filling:
- 400 g cottage cheese (any fat content)
300 g of fresh or frozen cherry
5 tablespoons Sahara
5 tablespoons sour cream
First we prepare pancakes. Whisk the eggs with salt and sugar, add the vegetable oil and mix. Pour in the milk and mix again well. Add the flour and baking powder (it can be replaced with 1 tsp of hydrated soda) and mix the dough thoroughly with a mixer or whisk.
Heat the frying pan and lightly lubricate it.oil. In the middle of the frying pan pour the dough and turn the frying pan to evenly distribute the dough over the surface. When the bottom of the pancake becomes golden, turn the pancake and fry the second side for a few seconds, and then take the pancake out of the frying pan.
Now we are preparing the filling. Mix cottage cheese with sour cream and sugar (if cottage cheese is grains, pre-rub it through a sieve). Frozen cherries are thawed and drained of liquid, and from fresh we take out bones. Add the cherry in the cottage cheese and mix.
We spread the filling on the center of the pancake and wrap it with an envelope. Such pancakes are best served with sweet sauces.
