Christmas carols

  • rye flour (or a mixture of rye and wheat flour in the proportions of 1: 1) - 2 tbsp.

  • water - 1 tbsp.

  • salt on the tip of the knife

  • melted butter for lubricating ready-made carols


Instead of water (or together with water), you canuse milk or sour cream. From flour, water and salt we knead the dough, cover it with a napkin and leave for half an hour. After that, cut the dough into the same pieces and roll it into round or oval cakes. Fill the cakes with stuffing and bake in an oven, heated to 200-220 ° C. Ready carols are smeared with melted butter (you can mix it with sour cream) for a soft and delicious crust.



And now we will tell you how to prepare various carrot stuffings. Usually Christmas carols are made with lean stuffings - vegetables, cottage cheese, cheese, porridges, mushrooms, berries.



Berry filling



For preparation of a berry stuffing we take:



  • berries - 1 tbsp.

  • sugar - 2 tbsp.

  • starch - 1 tbsp.


Berries we take any, wild-growing or garden: raspberries, blueberries, blueberries, blackberries, cranberries, strawberries. We mix the berries with sugar and lay out the stuffing according to carols. Starch is needed for juicy berries (blueberries, blueberries, etc.). He binds the juice and does not let the wickets get wet. If you do not want to add starch, sprinkle the dough with crushed breadcrumbs before spreading the filling.



Cheese filling



For the preparation of cheese filling we will need:



  • cheese or brynza - 150 g

  • eggs - 2 pcs.

  • greens (dill, celery, parsley) - 1 bundle


One egg is hard boiled, cleaned from the shell andfinely chopped. Cheese or brynza three on a large grater. The greens are finely chopped and added to the cheese. Then we put a chopped steep egg and break a raw egg. Thoroughly mix the filling.



Mushroom filling



To prepare a mushroom filling, we take the following ingredients:



  • fresh porcini mushrooms - 1 kg

  • butter - 1-2 tablespoons

  • onions - 1 pc.

  • sour cream - 0,5 tbsp.

  • salt - to taste

  • dill or parsley - to taste


Fresh white mushrooms washed, cleaned and boiled. Cooked mushrooms cut into slices and fry in butter. Onions are cleaned, finely chopped and fried separately from mushrooms. Add the onion and sour cream to the mushrooms. Solim mushrooms with onions and sour cream and stew them for about 20 minutes under the lid. Stewed mushrooms are cooled, greens finely chopped and added to chilled mushrooms.



Potato filling



For the preparation of potato stuffing we will need:



  • potatoes - 7-8 pieces.

  • butter - 2-3 tablespoons

  • egg - 1 pc.

  • salt to taste


We peel potatoes, wash and boil them toreadiness. We boil the boiled potatoes carefully to make the mashed potatoes. Add the butter and egg in the puree, salt and whisk thoroughly until the mass becomes homogeneous. The finished filling should have a creamy consistency.



Cottage cheese stuffing



To make a curd filling, take:



  • fresh cottage cheese - 100 g

  • egg yolk - 1 pc.

  • sugar - 0.5 tsp.

  • salt to taste


Cottage cheese we put in a bowl and knead it. Add it sugar, salt and egg yolk. Thoroughly rub the cottage cheese with sugar, salt and yolk, until we get a homogeneous mass.
