Vegetable side dish: Assorted with mushrooms



This garnish of fried vegetables is prepared quickly and simply. You can serve it to meat and even as an independent dish. For its preparation we take:



  • canned mushrooms - 100 g

  • potatoes - 2 pcs.

  • cucumber - 1 pc.

  • eggplant - 1 pc.

  • tomato - 1 pc.

  • vegetable oil - 2-3 tbsp. l.

  • ground black pepper, salt - to taste


Mushrooms are removed from the brine and thrown back on the sieve, so that the remaining liquid is drained. We boil potatoes in a uniform. Vegetables are mine and cut into circles, boiled potatoes are cleaned and also cut into circles.



Fry in vegetable oil mushrooms beforegolden hue. Also fry vegetables cut into circles: potatoes, tomato and eggplant. All types of vegetables are fried separately, each in its frying pan! In the process of frying salt and peppers vegetables to taste.



Fried vegetables and mushrooms, as well as fresh cucumber, we put on the dish stripes - separately each kind. We serve hot.



Vegetable side dish in the oven



You can bake vegetables on a garnish in the oven. This garnish fits well with chicken, fried fish, you can serve it as a separate dish. For its preparation we will need:



  • zucchini - 2-3 pcs.

  • potatoes - 2-3 pcs.

  • tomatoes - 2-3 pcs.

  • Bulgarian pepper - 2 pcs. (one red and one yellow)
    eggplant - 1 pc.

  • carrots - 1 pc.

  • blue onions - 1 pc.

  • garlic - 5-6 denticles

  • olive oil - 1.5 tbsp. l.

  • finely chopped fresh rosemary or thyme - 1 tbsp. l.

  • honey - 1 tbsp. l.

  • ground black pepper, paprika, salt - to taste


All my vegetables and clean. Bulgarian pepper cut into strips, onions - semicircles, garlic, potatoes, carrots, aubergine and zucchini - thin plates. Fold the vegetables in a large bowl, pour olive oil and honey, add rosemary, salt and season with pepper and paprika to taste.



After mixing the vegetables with your hands, we spread thema uniform layer on the baking sheet. Cut the tomatoes and put them on top. Sprinkle the vegetables with olive oil and sprinkle with salt. Cover the baking sheet with foil and bake vegetables for about 30-40 minutes in a heated oven to 180 ° C. Then remove the foil and bake for another 10-15 minutes. Readiness is determined by the availability of potatoes.
