Necessary ingredients:




  • eggs - 3 pieces


  • granulated sugar - 600 g


  • Butter - 250 g


  • flour of the highest quality - 600 g


  • honey - 5 tbsp. l.


  • soda - 1 tsp.


  • sour cream (15,20% of fat content) - 0,5 l


  • of condensed milk - 360 ml



Cooking method:




  1. We will cook the honeycomb cake in a water bath. Prepare a larger and one smaller pan in advance. A small saucepan should hold onto a large pan without sinking. Collect water and put on a plate to heat up.


  2. Let's start the dough. In a small saucepan, beat the eggs and 300 g of sugar in a thick foam. Sugar should completely melt. Add honey, 50 g of butter and soda (unsalted!) To the foam, and place on a water bath. Reduce heat to an average level and ensure that water does not spill out during boiling. Soon the test will become more and more. After 13-14 minutes, start adding flour in small portions, stirring until the lumps are completely eliminated. Next, knead the dough already on the table, adding the rest of the flour.beat the eggs


  3. The dough should turn out to be taut, beautifulbrown caramel color. Divide it into equal parts (5-7) and put it in the cold for half an hour. Pre-wrap in food film, so that it does not imbibe the smell of foreign products.


  4. Let's start baking cakes. Each piece of dough roll out and with a regular lid from the pan, separate the shape of the future cake, but do not tear off the trimming. Bake on a sheet covered with parchment paper for about 3 minutes at a temperature of 180 degrees. If bubbles are formed on the finished cakes, cut them with a knife immediately.   5. We now turn to the preparation of creams for cake. First, beat the sour cream with the remaining sugar. Use a mixer or blender for this.


  6. Whisk the condensed milk with a soft butter (200 g).


  7. We pass to the last stage - the cake. To the bottom of the cake is well soaked, first pour a little cream on the dish, and from above put the cake. Water each cake with creams, alternating them in any order.


  8. Pour the scraps from the cakes or pommel in the blender. Dust them with a cake on top and sides.
