flour - 500 g
eggs - 2 pieces (it is better to take only yolks)
Butter - 50 g
salt - to taste.
Cooking method:

gradually weave out, gradually pouring in small portions of liquid. It should not be very steep.

kefir - 200 ml

Cooking method:
mix kefir, soda, eggs, salt;
begin to gradually add sifted flour, initially we knead with a spoon, preferably a large wooden one, then with hands until the dough becomes dense.
Leave it in the cold for one hour, just time to make the stuffing.
Recipe # 3 Dough for dumplings with yoghurt
This dough is ideal not only for dumplings, but also for dumplings and ravioli. It is elastic, soft and practically does not require flour when rolling.
Necessary ingredients:
salt - to taste
flour - 700 g
yoghurt - 200 g
water - 1 tbsp.
eggs - 2 pieces
Cooking method:
mix in a bowl of water, eggs, salt and yogurt, it is better to knock down a mixer or a whisk before creating a homogeneous lush mass;
gradually add the flour in small portions until a tight test is obtained, which must be allowed to stand for half an hour in the cold;
you can start rolling and molding ravioli.
Recipe № 4. Dough for pelmeni without eggs
Almost all recipes use eggs, but if you simply did not find them, then this is not a problem. The shortage of eggs can be replaced with vegetable oil or sour cream and soda.
Option 1
Necessary ingredients:
flour - 300 g
water 400 ml (warm)
vegetable oil - 75 ml
salt.
Cooking method:
Sift flour, mix with vegetable oil and salt;
in the purchased mass very slowly add small amounts of warm liquid until a steep dough is obtained;
cover the semi-finished with a towel and set it in the cold for 15-20 minutes.
Option 2
Necessary ingredients:
flour - 3 tbsp.
water - 0.5 tbsp.
sour cream - 50 g
soda - 0.5 tsp.
salt.
Cooking method:
mix all dry ingredients to a homogeneous mass;
start with a thin trickle of water;
knead a steep dough and remove it in the cold for 15-20 minutes. It turns out very malleable.
