Analogues of dumplings are also found in Chinese, Thai, Korean cuisines. But they found the greatest love in the hearts and stomachs of our compatriots. Home dumplings - step-by-step recipe with photo



We recommend our culinary experiments witha quick classic version (with the addition of milk in minced meat). For home-made dumplings you will need two types of minced meat - beef and lean pigs. Both minced meat should be fresh, so we recommend you cook them yourself, and not buy a ready-made store product.






Necessary ingredients:




  • minced pork - 250 gr.


  • minced beef - 250 gr.


  • onions - 2 pcs.


  • flour - 600 gr.


  • eggs - 3 pcs.


  • milk - 1/2 cup


  • black pepper powder


  • salt


  • water




Step-by-step instruction




  1. To begin with, knead the dough from eggs, etc. In a deep bowl, drive in eggs, salt and mix well. We add about 0.5 cold boiled water and continue stirring the mixture. Gently pour the flour through a sieve and mix. Leave for 20 minutes, after which we knead the dough on a surface oiled with vegetable oil. Sprinkle with flour and poison into the refrigerator for 1-2 hours.


  2. While the dough cools down, we'll make mincemeat. Shredded meat mixed with finely chopped onions and let through a meat grinder. Add salt, pepper and milk. Thoroughly mix.


  3. The dough is divided into 3 equal parts. Each part is rolled thinly and with the help of a round shape (an ordinary glass is suitable) we separate small cakes. In the center of each billet lay out the forcemeat and gently tear the edges of the dough, giving the pelmeni a characteristic shape.


  4. We put the finished dumplings on the kitchen board,sprinkled with flour, and sent to the freezer for a couple of hours. We put the pan on the fire and when the water boils we send pelmeni into it. Cook, stirring for 7-10 minutes, until the dumplings appear on the surface. Ready-made dish is served with sour cream and herbs.



On a note! Very delicious turns and soup with dumplings. To cook this dish, just add the frozen dumplings to the boiling soup, after you threw potatoes and vegetable roast.






Dumplings with mushrooms - step by step recipe with photo




Traditionally in Russian cuisine dumplings are calledboiled dough products with meat or fish. But there is a delicious version of this dish and for vegetarians - pelmeni with mushrooms. For the filling perfectly suited: mushrooms, ceps, champignons and even ordinary oyster mushrooms. But we recommend trying to prepare this recipe with shiitake mushrooms - the famous Japanese delicacy.





Necessary ingredients:




  • Shiitake mushrooms - 500 gr.


  • green onions - 1 beam


  • flour - 400 gr.


  • olive oil - 5 tbsp. l.


  • water


  • salt


  • pepper




Step-by-step instruction




  1. Mushrooms and finely chopped.


  2. We will wash the feathers of onion, we will dry it on a towel and finely chop it.


  3. In a deep frying pan pour a little olivebutter and add the mushrooms with onions. Fry on low heat for 10-15 minutes. Shiitake should decrease in volume and change color. Ready mushrooms and white pepper.


  4. In a deep bowl, pour 3 tablespoonsvegetable oil and pour 1/2 cup of boiling water. Add flour, salt and quickly mix the dough with a wooden spoon. Cool the dough on a flour-padded surface, and divide into several identical parts. Thinly roll out and form circles in a glass. We put mushrooms in the center of each flat cake.


  5. We protect the pelmeni in the form of a crescent, gently combining the edges of the dough. We put the blanks on the board. We send it to the freezer for 1-2 hours. Then dumplings with mushrooms can be cooked.



On a note! Dumplings with this recipe can not only be cooked, but also fried. For this, semi-prepared dumplings are fried in vegetable oil until golden brown.
