Recipe for pies with potatoes from yeast dough



To prepare pirozhki we need the following ingredients:




  • ½ cup (125 ml) of warm water (for dough)


  • 1 packet of dry yeast (7g) (for dough)


  • 3 cups (470 g) flour (for dough)


  • 1 ½ tsp. salt (for the test)


  • 2 tbsp. l. sugar (for dough)


  • ½ cup (125 ml) of milk (for dough)


  • 1 egg + 1 egg whites (leave the yolk for greasing pies) (for dough)


  • ½ cup of oil (125 ml) (for dough)


  • 3 tbsp. l. oils (for potato filling)


  • 1 small onion (crushed) (for potato filling)


  • 4 medium potatoes, cooked and peeled (for potato filling)


  • 1/3 cup chopped fresh coriander (coriander) or parsley or dill (you can use several herbs at the same time) (for potato filling)


  • salt, pepper to taste (for potato filling)


  • 3 tbsp. l. oils (for meat filling)


  • 1 small onion (crushed) (for meat filling)


  • 375 g. ground beef (for meat filling)


  • salt, pepper to taste (for meat filling)


  • 1 egg yolk (for lubrication)

  • Dissolve dry yeast in warm water, leavefor 5 minutes stand up. In a separate bowl, combine and stir well the flour with salt and sugar, and pour this mixture gradually into the yeast solution. Add milk, eggs and butter and mix yeast dough for pies. Lubricate the working surface with flour, knead the dough well for 5-6 minutes, until it becomes homogeneous and elastic.




  • Place the dough in a large bowl, coverpolyethylene film or a kitchen towel and leave in a warm place for an hour and a half to make it come up. Dough should increase in volume at least twice, look bloated and if you poke it with your finger, be soft to the touch.




  • While the dough rises, we prepare the filling. To prepare the filling from potatoes for pies on a small frying pan, we heat the oil. Add the onion, and lightly fry it (5-7 minutes). We make mashed potatoes from cooked and peeled potatoes, in which we add fried onions, greens, salt and pepper. Well, everything is mixed.




  • A classic recipe is baked patties withpotatoes, but the filling can be replaced to your liking. To prepare the meat filling, heat the oil in a small frying pan. Fry the chopped onions until translucent. Add meat and fry for 10 minutes, stirring occasionally. Add salt and pepper to taste. Meat filling is ready.




  • If there is a desire, fried with onion minced beadditionally grind on a food processor. Another variant of the filling for yeast pies may be, for example, ground feta cheese mixed with parsley. Gently press the dough so that the gases come out. The dough should not be sticky. Divide the dough into small lumps, which you should get 22-25 pieces.




  • When preparing pirozhki with potatoes, there are two ways of forming the pie, choose any that will be closer to you. Method one, how to make baked pies: using a rolling pin, roll each ball from the text so that a circle of centimeters of 10 diameters is produced.




  • Put in the middle of the resulting circle a tablespoon of filling, connect the edges and seal the patty, giving it a neat oval shape. Do the same with the rest of the dough.




  • The second method: since the dough is very elastic, balls from the dough are easily kneaded by hand into flat circles. How to do it, look at the photo above. This method of modeling pies is very quick and easy.




  • Put the resulting patties on a baking tray andleave for 15 minutes. Leave a little space between the pies. Meanwhile, preheat the oven to 180C. Lubricate patties on top with egg yolk and bake for about 25 minutes or until cooked. Delicious pies with potatoes are ready, you can serve them on the table!






In order for the dough to come up, all the ingredientsshould be room temperature. Extract the eggs from the refrigerator 30 minutes before adding them to the dough. If you have used up all the stuffing, but you have a little dough left, you can make small buns for dinner.



Roll the dough into small koloboks, greaseon top with egg yolk, sprinkle with sesame and bake in the oven for about 25 minutes or until golden brown. We hope that our photo-recipe helped you cook delicious pies. Bon Appetit!
