Snack Cake
In the usual sense, cake is a sweet dish,which is usually served for dessert. But if you want to surprise your guests, you can serve an unusual snack cake on the table, which, as the name suggests, plays not a dessert role, but snacks. What is snack cake and how to cook it?
Snack Cake (sandwich cake) Is a dish of Scandinavian cuisine. Such cakes are popular in Finland, Sweden, Estonia, Hungary, Poland. In fact, it is a large sandwich, but because of the size and a large number of layers and fillings it is called a cake.
Usually snack cake is made from white or rye bread. But over time, there were other variations. Our landladies managed to make such cakes from crackers, pancakes, waffle cakes. A snack cake "Napoleon" is made of cakes of puff pastry.
Layers of cake are smeared with mayonnaise, cream cheese, pâté or other suitable creamy product. The filling can be any, the main thing is that the products are combined with each other to taste.
Top cake is usually decorated with vegetables, greens, thin slices of cheese, fish or ham, shrimps, etc. A sandwich cake is served in cold form, cutting into pieces, like a normal cake. We offer several recipes for snack cakes to choose from.
Finnish snack cake
This is a more or less classic recipe for a sandwich cake from his homeland - Finland. For the preparation of this original snack we will take:
bread for toast
cream cheese (like Philadelphia) - 300 g
salted salmon fillet - 300 g
cold fish broth - 200 ml
ricotta - 250 g
canned tuna - 150 g (1 pot)
herring fillets - 100 g
green onions - 1 beam
dill - 1 bunch
olives for decoration
First we prepare "cream", for this cream cheese is mixed with ricotta until homogeneity. Approximately the fifth part should be immediately separated, then used for decoration.
Finely cut in half a bunch of onions and dill, andalso herring fillets. Canned tuna mash with a fork. A mixture of cheese and ricotta is divided into two parts, one mixed with tuna and green onions, the second - with herring and dill.
Take the serving dish and lined it with foilor food film. An even layer of laid pieces of bread (you can pre-cut them with a crust). We soak the bread with fish broth so that the "cake" is soaked.
We spread some of the filling on the bread. From the top we lay the second layer of bread, soak it with broth and grease the filling. So we alternate cakes and stuffing. The top layer should be bread impregnated with broth. The number of layers can be different depending on how much you spread the fillings.
We cover the cake with a film, put the board on topa small load and put in the refrigerator for several hours. Ready cake neatly smeared with the remaining cream cheese with ricotta, sprinkle the sides with finely chopped green onions.
To decorate the fillet of salmon cut thin slices (you can buy already sliced), turn off the roses and put it on the cake. Nearby lay olives (you can put them in the center of roses) and twigs of dill.
Snack cake with boiled ham
This cake, perhaps less refined than the previous one, but very tasty, hearty and easy to prepare. For him we will need:
300 g of butter
200 g of rye bread
200 g of wheat bread
100 g of cooked ham
100 grams of hard cheese or fresh vegetables
1 yolk boiled egg
1 lemon
greens of parsley, dill, green onions - to taste
With bread cut the crust and cut it into slices half a centimeter in thickness. When preparing this cake, we will alternate layers of rye and wheat bread.
The oil is divided into three parts, previously leavingslightly to cover the top and sides of the cake. The first part is mixed with finely chopped ham, the second - with finely chopped herbs, the third - with a wiped yolk.
We spread the first layer of bread, smeared with butter and ham. From above put the second, on it - a layer of butter with greens. The third layer of bread spread with butter and yolk. Cover with the last layer of bread.
Top and sides of the cake is coated with butter and sprinkled with grated cheese (as an option - any finely chopped fresh vegetables). We decorate with greens and slices of lemon.
