The recipe for hummus

The basis of hummus is mashed potatoes (also known as turkish peas or lambpeas). In addition, olive oil, tahini (sesame paste), lemon juice and condiments (cumin / zir, garlic, paprika, salt, chili, onions, parsley, etc.) are usually included in the humus composition. The hummus is served as a snack, usually with bread products - lavash, pita, bread, corn chips.
Hummus is very useful for health. Due to the large amountvegetable protein and unsaturated fats, it is very nutritious, but it does not increase the level of cholesterol in the blood, but, on the contrary, lowers it. Due to the high fiber content, hummus has a beneficial effect on the digestive system.
The classic recipe for hummus
This recipe for hummus can be called classical. In general, hummus is not complicated in cooking, but the process takes a lot of time, because chickpeas need to be soaked for a long time. For the preparation of hummus, we take:
dry chickpea - 1 tbsp.
sesame - 0.5 tbsp.
garlic - 3 cloves
cumin (zira) - 2 tsp.
olive oil - by the eye
juice of one lemon
freshly ground black pepper, sea salt - to taste
Nut soaked for the night. Water, which soaked the chickpeas, merge, pour the chickpea fresh. Put the chickpeas on the fire, bring to a boil, remove the foam and boil for about 15 minutes. Then drain the broth, again pour the chickpeas with fresh water and cook on low heat until soft, covering the lid. This should take about two hours.
While brewing chickpeas, we prepare thina - sesame paste. Seeds of sesame fry in a dry frying pan with the addition of 1 tsp. cumin (zira). If there is no zir, you can take caraway instead. Then grind everything with olive or sesame oil.
We merge the chickpea with chickpeas, but we do not completely pour it out -it is still useful to us. Chickpeas and garlic are put in a blender, we add a little broth (it is better to add less than overdo it) and grind to the consistency of a thick manga, if necessary adding a decoction.
We squeeze into the ground chickpeas lemon, add thina, salt and pepper, actively mix. With a thin trickle, pour in the olive oil without stopping to whisk. Ready to put the hummus on the dish.
Recipe of hummus with spices
In this version of hummus spice is already more. To make hummus according to this recipe, we will need:
400 g chickpeas
7 tablespoons olive oil
2 tablespoons ground sesame seeds
juice of one lemon
1 clove of garlic
0.5 tbsp. cilantro seeds
0.5 tbsp. ground cumin
0.5 tbsp. ground paprika
Nut soaked in cold water at night. Then drain the water, pour the chickpeas again with cold water and cook until it becomes soft. The remaining water is drained and put the chickpeas into the blender.
Add to the chickpea sesame, lemon juice and spices,grind everything to a homogeneous consistency. Continuing to mix, pour olive oil in a thin trickle. Before serving, we give hummus about one hour.
Recipe for hummus with fried garlic
You can cook hummus with fried garlic. For this we need to take such ingredients:
soaked chickpeas - 450 g
garlic - 1 head
lemon juice - 2 tbsp.
olive oil - 1 tbsp.
oregano - 1 tbsp.
Chickpeas are soaked and cooked in the same way as in any of theprevious recipes. Garlic is divided into denticles and finely chopped. Lightly fry the chopped garlic for literally 30 seconds so that it does not burn out. Then do the hummus in the same way as in the previous recipes, first mixing all the ingredients, and then gradually adding the olive oil.
Before serving, you can sprinkle whole hummusbeans chickpeas (pre-cooked), toasted pine nuts, finely chopped herbs, ground paprika - in general, to diversify the recipe of hummus, as you wish.
