Berries in the snowDelicious and light New Year's dessert - «Berries in the snow». It is prepared from a biscuit dough with a delicate filling of berry platter and whipped cream. Real jam! Such a cake will serve as an excellent end to the New Year's Eve.

Ingredients for biscuit dough



  • flour - 150 g

  • sugar - 180 g

  • eggs - 6 pcs.

  • starch - 50 g

  • baking powder - 1 tsp.

  • hot water - 4 tbsp. l.

  • a pinch of salt

  • oil for lubrication of molds


Ingredients for filling



  • berry assortment - 750 g

  • cream - 750 g

  • flour - 1 tbsp. l.

  • powdered sugar - 1 tbsp. l.

  • vanilla sugar - 1 sachet


Separate yolks from proteins. Mix the yolks with hot water and 60 g of sugar, whisk until a thick foam is formed with a mixer. Whisk the proteins with salt in a thick foam. Continuing to beat the proteins, gradually enter the remaining sugar in them. Gently lay the protein foam on the cream of yolks.




Combine the flour, baking powder and starch,mix and sift above the whipped whites. Stir the dough with a large whisk. Put the ready-made biscuit dough in a greased baking dish. Bake the biscuit for 35 minutes in a preheated oven at 200 ° C. When the biscuit is ready, carefully remove it from the mold, cool and cut with a sharp knife horizontally into three identical cakes.



If the berry assortment is freshly frozen, thawit at room temperature. If the berries are fresh, wash them, peel them and dry them (or gently wipe them with a clean towel). Small berries leave whole, and large cut carefully into several pieces. Combine the sugar powder, flour and vanilla sugar and mix well. Start whipping the cream and pour the resulting mixture into the mixture with a thin trickle. Divide the cream into two parts. In one part, put the berries (do not forget to leave some beautiful large berries to decorate the cake) and mix.



Spread two biscuits with berry filling and put themone on another. Cover the cake with the third cake and put it on the refrigerator for an hour. Then evenly cover the cake with the remaining whipped cream. Decorate the edges of the cake with roses from whipped cream, squeezed with a confectionery syringe, and berries.
