To bake a carrot cake, prepare the following foods:



  • grated carrots - 300 g

  • soft butter - 300 g

  • brown sugar - 300 g

  • flour - 200 g

  • powdered sugar - 200 g

  • ground almonds - 120 g

  • ground walnuts - 120 g

  • eggs - 5 pcs.

  • lemon or orange - 1 pc.

  • vanilla sugar - 1 sachet

  • baking powder - 1 sachet

  • a pinch of salt

  • cinnamon to taste



Separate the proteins from the yolks. Whisk the butter with 200 g of sugar, cinnamon, vanilla sugar, salt and zest of one orange or lemon to make a soft cream. Add yolks into it. In another mixing bowl, sprinkle the spruce with flour, add to it the ground walnuts and almonds. In a third bowl, whisk the squirrels with 100 grams of sugar to hard peaks.



Then, connect the contents of all three bowls andgrated carrot on a small grater. Note that the proteins need to be mixed very carefully. The best thing for these purposes is a shovel made of silicone. Transfer the finished dough into a greased form and bake the cake for an hour in a heated oven to 180-190 ° C.



While baking the cake, prepare the icing, whipping the powdered sugar with the juice of one orange or lemon. Finish the cake with glaze and serve to the table.
