Florentine Soup


To make soup you will need:




  • 500 ml chicken or vegetable broth

  • 30 ml of milk

  • 175 ml of creamy cream

  • 500 grams of spinach

  • 90 g of butter

  • 100 g finely chopped shallots

  • 30 g of flour

  • 1/4 tsp. grated nutmeg

  • 2 hard-boiled eggs,

  • salt and pepper to taste




Preparation



  1. Sprinkle the spinach, remove the cuttings and rinse thoroughly. Put the spinach in a large saucepan and cook over medium heat until it becomes soft. Drain the water with spinach in a colander and squeeze it well.



  2. Melt butter in a large saucepan, addshallots and pass until softened. Then add the flour, stir and pass for another 1 min, then add broth and spinach, cover and cook for 15 minutes. Season with salt, pepper and nutmeg.


  3. Prepare the soup with a mixer, then pour back into the pan, add the milk and lightly heat.


  4. Before serving, add half of the cream. When serving, put the remaining cream separately in each plate and decorate with egg slices.
