Kish is lorin
Kish is lorin (Lorana kish, Lorraine kish, Lorrainepie, Laurent pie) is one of the most famous dishes of French cuisine. This is an open pie from unsweetened chopped dough with smoked bacon and filling with eggs, milk (cream) and grated cheese. The recipe for kisharen pie offers the Country of Soviets.




The classic kisha lauren is prepared with a brisket. All other open pies made from chopped dough -with chicken, mushrooms, fish, vegetables and other fillings and pouring - can also be called "kish", but they lose the right to be called the Laura kish.



When the kish is cooked, first bake a cake ofchopped dough until half cooked, then put fried bacon in it and pour omelet mass from eggs, milk (cream) and cheese. And then they bake the cake until ready, so that the filling will harden, but not too rosy. Kish lauren is served in a warm form, very well it is combined with a green salad. Sometimes it is not made from chopped dough, but from puff pastry.



Kish Lauren: 1 version



This recipe kisha is designed for a shape with a diameter of 20 centimeters. Ingredients we need the following.



For chopped dough



  • flour - 200 g

  • butter - 100 g

  • ice water - 5 tbsp. l.

  • a pinch of salt


For filling and filling



  • cream (fat content 10-20%) - 200 ml

  • Smoked bacon - 150 g

  • hard cheese - 100 g

  • eggs - 2 pcs.


We cut the butter into cubes, mix it with flour andsalt and chop into crumbs. Add the water and knead the dough. Roll out and lay out in the form (the cake should turn out with the sides). We puncture the cake with a fork, lining culinary parchment and cover it with beans. We put in the oven heated to 200 degrees and bake for 15 minutes. We remove beans and paper, for another 5 minutes, dry the bottom of the cake.



We fry the brisket and grate the cheese. We mix cream, eggs and cheese. The brisket is laid out on the cake, pouring the top on top and baking for 20 minutes at a temperature of 200 degrees. Ready cooked pie is allowed to cool for 5 minutes, then cut and served in a warm form.



Kish Lauren: Option 2



In principle, this recipe is not too different from the previous one, only it is designed for the form of a mute larger diameter - 23 cm. We take out the following ingredients from the refrigerator.



For chopped dough



  • flour - 150 g

  • Butter - 75 g

  • cold water - about 1/4 tbsp.

  • a pinch of salt


For filling and filling



  • bacon or fatty ham - 200 g

  • milk - 3/4 tbsp.

  • sour cream - 1/2 tbsp.

  • eggs - 2 pcs.

  • a handful of grated hard cheese

  • salt, ground black pepper, nutmeg - to taste


We cut the butter into cubes, mix it with flour andsalt, hands turn into a crumb. Gradually pouring water, knead the dough (the water may need more or less depending on the quality of the flour and oil). Roll out the dough to a thickness of 3 mm, lay out in the form (do not forget about the sides), pierce the fork and put it in the refrigerator. Preheat the oven to 200 degrees, bake the cake in it for 10-15 minutes (until golden hue).



Bacon cut into small cubes, fry. Mix milk, sour cream and eggs, salt and pepper to taste, add nutmeg. On the cake we spread the bacon, fill it with salt, sprinkle with grated cheese. Bake for about half an hour at a temperature of 200 degrees. Kish is ready!
